This Saffron Cardamom Lemonade is a celebratory take on homemade lemonade, with a fragrant saffron and cardamom lemon syrup that you can make ahead. Serve it over plenty of ice, then top with chilled still or sparkling water. It’s fresh, elegant and festive!

Saffron automatically makes a drink feel that little bit more special (I mean just look at this gorgeous saffron milk!), which is why I love this lemonade for Diwali and other celebrations. In fact, I made it recently for Raksha Bandhan and my whole family loved it!
It tastes like proper lemonade - think fresh, sharp and refreshing but with a fragrant Indian twist and a prettier way of serving it!
I make a simple syrup with crushed cardamom, then let saffron steep in it while it’s still warm. Fresh lemon juice goes in once everything has cooled slightly, and that becomes the concentrate I keep in the fridge until I’m ready to serve.
When serving, I’ll pour it over lots of ice and top it with water or soda water. It looks festive without being fussy, which is exactly what I want when there’s already enough going on in the kitchen!
If you'd prefer something creamy instead, try my royal rose and pistachio falooda with ice cream.
You can also go down the mocktail route, with my sparkling pomegranate mocktail or virgin cardamom mojito.
The Syrup
The cardamom, saffron & lemon syrup does a couple of jobs at once.
It dissolves the sugar, draws flavour from the cardamom and gives the saffron something warm to steep in.
Then the lemon goes in afterwards, so it keeps that fresher flavour instead of being cooked along with the sugar.
It also means you can make the whole concentrate ahead and simply top each glass with water when people arrive!
Ingredient notes
You’ll find the full ingredients list with measurements in the recipe card below, but these are the little details that make a difference.
Fresh lemons
Freshly squeezed lemon juice really is worth it here. I strain it before adding it to the syrup so the finished drink stays smooth rather than pulpy.
I don't recommend using bottled lemon juice as it usually tastes dull and flat compared with squeezing fresh!
Saffron
Add the saffron while the syrup is still warm, but after taking it off the heat.
That gives it time to steep gently and release its colour and flavour without boiling it.
Cardamom
I lightly crush the cardamom before heating it with the sugar and water.
Once the sugar has dissolved, strain the syrup so you get the flavour without cardamom seeds floating around in the finished lemonade.
Still or sparkling water
Both work. Still water gives you a classic, smooth lemonade; soda water makes it feel just a little more celebratory!
Let's Make Saffron Cardamom Lemonade Together

- Mix sugar, water and cardamom.

- Heat until sugar dissolves: Heat the sugar, water and crushed cardamom gently until the sugar has completely dissolved. There’s no need to boil it down or make a thick syrup.

- Strain and add saffron: Remove from the heat and strain out the cardamom. Add the saffron to the warm syrup and leave it to steep.

- Add freshly squeezed lemon juice: Squeeze and strain the lemon juice, then stir it into the saffron syrup.

- To serve: Fill a glass with ice, add the saffron-lemon syrup.

- Top with water and serve: Top with chilled water or soda water. Finish with fresh lemon slices.

Serving Ideas
I think this saffron lemonade really comes into its own with party food. The fresh lemon cuts through richer starters, while the saffron and cardamom make it feel special enough to sit alongside something a little more dressed up.
Try it with malai broccoli for a fresh contrast to the creamy marinade, or alongside tandoori paneer tarte au soleil or hash brown and pineapple chaat for a festive Indian-fusion spread.
I’d also happily serve it with pyaaz kachori pinwheels - it has enough spice and savoury flavour to make a cold, sharp lemonade very welcome.

Notes
- Heat the sugar only until dissolved; you don’t need a thick sugar syrup.
- Lightly crush the cardamom so it infuses the syrup, then strain it out.
- Add saffron after removing the syrup from the heat and let it steep while warm.
- Strain the fresh lemon juice for a smooth lemonade.
- Chill the concentrate before serving.
- Dilute with still or sparkling water to taste.
- Add the water only when serving so the lemonade stays fresh and doesn’t get diluted by melting ice.
