This Mint & Clove Ginger Beer is guaranteed to make you feel refreshed. It's an easy sparkling drink made with a real ginger syrup, a pinch of clove powder and lots of fresh mint leaves. Triple yum!

A fresh Ginger Beer With Lots of Personality!
I LOVED ginger beer as a kid! It was the ultimate summer drink in our house, with a bottle chilling in the fridge all summer long.
This homemade version is reminiscent of that classic flavour but a little more grown up.
A little clove powder gives depth and spice and mingles with the ginger syrup. The mint leaves are vibrant and make the drink exciting!
I love this chilled ginger beer as part of a summer picnic spread with watermelon mint salad, cooling yogurt sandwiches or sundried tomato chickpea cakes.
It's simple to make too. I blend ginger, mint and sugar until I get a smooth puree. I then flavour with a fresh squeeze of lemon and clove powder. If you don't have clove powder, you can simply blend a whole clove with the ginger. When ready to serve, it's topped up with plain soda, ice and more mint.

Mint & Clove Ginger Beer
Equipment
- Blender
- Beer mugs
Ingredients
- 30 grams ginger root fresh
- 4 tablespoon mint fresh
- ¼ teaspoon clove powder or 1 whole clove
- ¼ cup lemon/lime juice
- ½ cup muscovado sugar or sweetener of choice
- 2 cup sparkling water chilled
- ice optional
Garnish
- mint
- lime/lemon slices
Instructions
- Wash, peel and roughly chop 30 grams ginger root into small pieces.
- In a blender jug add the chopped ginger, 4 tablespoon mint and ½ cup muscovado sugar.
- Add little water and blend til you get a smooth puree.
- Take a sieve or cheese cloth and strain all the juice.
- Add ¼ cup lemon/lime juice and ¼ teaspoon clove powder, stir well.
- To make one drink, add ice to a beer mugs. Pour in ginger syrup a third of the way into the glass and top two thirds with sparkling water. Repeat for the remaining glasses.
- Garnish with lime/lemon slices and mint.
- Serve immediately.

The surprise spice in this drink is clove. Adding that teeny weeny piece of spice makes all the difference. Next time I make ginger lemonade will add clove. Beautiful clicks.
