Cardamom Mojito Mocktail - a refreshing non alcoholic drink made with a homemade cardamom simple syrup, fresh lime, soda and plenty of mint. Who knew this combination would taste so good!

A Fun Twist on the Classic Mojito!
An Indian spice in a Cuban mocktail? Why the heck not!
I love adding cardamom in unlikely combinations - these creamy cardamom potato dauphinoise and smooth saffron & cardamom Mexican horchata are perfect examples.
The cardamom flavour is delicate here but it's definitely there. It peeks through the lime and minty-ness in a way that shouldn't work, but totally does!
Serve this non alcoholic drink the same way you would a mojito. It would also make a welcome addition to a Diwali dinner party.

Ingredients you'll need

1. Cardamom - I use green cardamom only for this recipe. Black cardamom is too savoury and won't work here.
2. Sugar - I'm using white sugar to make a cardamom simple syrup.
3. Soda water - any soda water or sparkling water will work. I do find though that sparkling water is not as fizzy.
4. Lime - a mojito can not be complete without using fresh lime or lime juice. Use juicy and plump limes for maximum juice extraction.
5. Mint - fresh mint leaves.

This simple syrup will keep refrigerated for about a month.
Be careful when muddling - too much will make the drink bitter

Cardamom Mojito Mocktail
Ingredients
- 3 green cardamom pods
- 300 millilitres soda water
- 4 tablespoon mint leaves fresh
- 6 tablespoon sugar
- 1 lime
- ice cubes to serve
Instructions
- Crush the cardamom pods (skin on) and boil along with the sugar and 90ml water.
- Once the sugar is dissolved, remove from the heat and allow the flavour to develop.
- Strain the mixture and allow to cool completely.
- Lightly muddle the mint leaves and lime wedges in 2 tall glasses.
- Equally divide the flavoured cardamom syrup between the two glasses.
- Top with soda water and serve with extra mint leaves and ice.
