Sabudana Chivda (Fried Sabudana Namkin)
This Fried Sabudana Namkeen is a crisp, light snack made with deep-fried sabudana pearls tossed with crunchy nuts, curry leaves and green chillies. Lightly spiced and perfect for festive snacking or teatime munching.
Ingredients
- 1 cup nylon sabudana sago large pearls, for frying
- oil for deep frying
- ¼ cup raw peanuts
- ¼ cup cashew nuts
- 2 tablespoon raisins
- 1 sprig curry leaves fresh
- 5 green chillies chopped
- 1 teaspoon red chilli powder
- 1 tablespoon caster sugar optional
- ¼ teaspoon citric acid powder limboo na phool, optional
- salt to taste
Instructions
- Heat oil in a heavy-bottomed pan or kadai for deep frying.
- Fry sabudana in small batches until they puff up and become crisp.
- Remove and drain on a plate lined with kitchen paper, then transfer to a large mixing bowl.
- In the same oil, fry peanuts, cashews and raisins until lightly golden. Add to the sabudana.
- Reduce the heat and fry curry leaves and green chillies until crisp.
- Add the fried curry leaves and chillies to the bowl.
- Season with salt, red chilli powder, sugar and citric acid powder (if using).
- Mix everything well until evenly coated.
- Allow to cool completely, then store in an airtight container.
Notes
Do not overcrowd the pan with sago pearls when frying.
Whilst frying chillies and curry leaves, be careful as they may splutter.
Instead of citric acid, you can use amchoor powder.
