Here are my Masala Maggi Noodles, inspired by the Indian street food version. Maggi noodles are tossed with veggies and the all important tastemaker sachet! A quick and easy snack that's full of colour, spice and flavour.

Instant noodles scream uni student food - quick, cheap and eaten straight from the pan. At least that's what I did ... But masala maggi is something else entirely. In India, it’s a much-loved street food, cooked fresh with plenty of spice and a generous handful of vegetables. It’s still speedy, but it’s layered with flavour, colour and texture. I love it as a snack with a cooling strawberry lassi or a fizzy street style masala soda.

Maggi noodles - you need packets of the 2 minute Masala Flavour Instant Noodles.
Onions, tomatoes and green chillies - finely chopped.
Vegetables - the street food version is usually made with capsicum, carrots, peas and green beans. I've used a frozen mix veg mix for ease.
Spices - again the street style version uses red chilli powder and turmeric powder. I prefer not to add too much as the taste maker has plenty of it's own flavour. You can easily adjust the spice level to suit your taste.
Oil - any flavourless oil works fine. I've used vegetable oil.
Granish - fresh chopped coriander.

Storage
Masala Maggi is best eaten immediately as leftovers tend to congeal. Reheat if needed with a splash of water.

Masala Maggi Noodles
Ingredients
- 3 packets maggi noodles 50-70 grams each
- 3 sachets maggi masala tastemaker find them in the maggi packet.
- ¾ cup mixed vegetables
- ½ cup green bell pepper chopped
- 1 medim onion chopped
- 1 large tomato chopped
- 2 large green chillies chopped
- 3 tablespoon oil
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- pinch salt to cook vegetables
- boiling water based on packet instructions
Garnish
- 3 tablespoon fresh coriander
Instructions
- If using frozen mixed vegetables, first thaw in microwave. Keep it aside.
- Heat 3 tablespoon oil in a pan on medium heat, add 1 medim onion and saute until it turns soft and light pinkish in colour.
- Add ½ cup green bell pepper and 2 large green chillies, and cook for a couple of minutes.
- Then add ¾ cup mixed vegetables 1 large tomato and pinch salt, cook further until tomto gets softer on high flame.
- Add 1 teaspoon red chilli powder, ½ teaspoon turmeric powder and 3 sachets maggi masala tastemaker. Mix well then add boiling water.
- Allow water to boil, add 3 packets maggi noodles and mix. Cover the pan with a lid. Cook the maggi noodles for 2-3 minutes on medium heat or until water absobrd.
- Sprinkle 3 tablespoon fresh coriander, mix and serve hot.
