These eggless scones are so buttery, soft and crumbly with a hint of lavender. They have a gorgeous floral aroma, making them perfect for a summer afternoon tea.

The best ever eggless scones
These lavender scones take me straight back to wandering through Mayfield lavender fields, where everything smelled soft, floral, and just a little bit dreamy.
I tried a lavender scone, along with lavender coffee frappuccino, there for the first time and remember thinking how subtle it was, not soapy or overpowering. I wanted to recreate that exact feeling, so this eggless version came together. They bake up buttery, crumbly, and feather-light, with just enough lavender to make them unique.
These remind me of the first scones we were taught to bake in school, but they're just a little more grown up and fancy.
Serve them warm with plenty of clotted cream, or sweet cardamom whipped cream, and a good strawberry jam, or switch things up my homemade strawberry rhubarb jam for something a little sharper. They’re perfect with a classic English tea, but I love pairing them with masala chai.

- self-raising flour – this is plain all purpose flour with baking powder added to it
- unsalted cold butter – the unsalted butter should be chilled and cut into cubes or grated (you can use a box grater)
- caster sugar
- dried or fresh lavender flowers – make sure you choose culinary lavender otherwise the lavender may be treated and won’t be safe for culinary use. English lavender is the sweetest and the best to use in cooking
- whole milk – whole milk is better than semi-skimmed or skimmed as the fat from the milk makes the scones more melt-in-you-mouth
- salt – just a small pinch to taste
Step by Step Method










Air fryer Scones (eggless)
You can easily make buttery scones in your air fryer.
Prepare the scones as per the recipe
Preheat the air fryer to 180 C



Place scones into the air fryer basket
Air fry for 5 minutes on 180C
Reduce the heat to 160C and air fryer for another 2-3 minutes or until the top of the scones are lightly golden.

Eggless Lavender Scones
Equipment
- 1 Bowl
- 1 seive
- 1 oven or air fryer
- 1 Baking tray
Ingredients
- 225 gram self-raising flour sifted + extra for dusting
- 50 gram unsalted butter chilled and cubed
- Big pinch salt
- 50 gram caster sugar super fine sugar
- 1 tablespoon lavender flowers dried or fresh
- 110 millilitre whole milk
Instructions
- Preheat the oven to gas mark 7 or 200C.
- In a mixing bowl add 225 gram self-raising flour , 50 gram caster sugar , 1 tablespoon lavender flowers and add Big pinch salt. Mix well.
- Add chilled 50 gram unsalted butter and using your fingertips rub butter into flour until mixture resembles breadcrumbs.
- Add 110 millilitre whole milkmix with the spatula until mixture forms a soft dough.
- Sprinkle some flour on the work surface and knead the dough only for few times.
- Don’t try to knead too much else scones will be too tough and won’t rise high.
- Pat the dough with your fingertips into around 2cm thick.
- Dust the baking tray with the flour.
- Using a 5-7cm round cookie cutter ( I used ridge side) cut out the scones.
- Press the dough together again cut out some more scones.
- Place scones on the prepared flat baking tray.
- Brush top of the scones with very little milk.
- Bake for 18-20 minutes ( check the scones after 15 minutes ) or until lightly golden and well risen.
- Once done immediately transfer them on a wire rack to cool slightly.
- Serve warm with clotted cream and fruit preserve.
Notes
Don't try to knead the dough too much.
Although scones can be eaten on the next day, they are best on the same day.

Scones are among my favorites to make and to eat. Here in Canada, the majority of the places sell scones with a texture more like a muffin or cake, which I do not like. Yours seem crumbly and just the way I like them. Will try your recipe without the egg!
