
Gujarat na daal Vada became famous from the Dal vada street vendors outside the Gujarat College in Ahmedabad city of Gujarat state.
Mostly every collegian passes their free time at those vada stall and snacking on those irresistible vadas. If you are passing by from there, the frying vada smells tempts you to buy those vadas, just wrapped in old newspaper.
No chutney is traditionally required, as the vada are served with spicy fried chillies and onions.

Gujarati Dal Vada
Ingredients
- 1 cup split yellow moong dal
- 1 cup split green moong dal
- 10 to 12 fresh green chillies
- 2 inch piece fresh ginger
- 6 to 8 garlic cloves
- salt to taste
- ΒΌ teaspoon baking soda
- oil for deep frying
To serve with
- green chillies
- 1 medium onion red or white
Instructions
- Rinse both lentils thoroughly and soak together at least for 4 hours or overnight.
- Drain and rinse again in fresh water.
- Grind the soaked lentils with green chillies, ginger, and garlic, adding only a little water to form a thick, coarse batter. Do not make it runny.
- Add salt and baking soda, then mix well.
- Heat oil in a deep frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry on medium to low heat until golden brown.
- Ensure the vada are crisp on the outside and soft inside.
- In the same or separate pan, lightly fry extra green chillies and sprinkle with salt.
Notes
- The batter should remain thick and coarse for the best texture.
- Adjust chilli levels based on preference.
- You can add garlic with ginger and chillies whilst grinding the lentils.
