These Air Fryer Veggie Fajitas are colourful, smoky and perfect for a quick vegan lunch or weeknight dinner. Firm tofu, peppers and onion are tossed with fajita seasoning and crushed tomatoes, then cooked in the air fryer until the tofu is lightly crisp and the vegetables still have some crunch. Utterly delicious wrapped in tortillas or served as a fajita bowl.

I usually make these when I want something colourful and quick without standing over a frying pan. For a similar stovetop version with beans, try my tofu black bean fajitas, or for another Mexican-style vegetarian meal, make sweet potato and black bean quesadillas or espresso black bean tacos.

Tofu
Firm tofu works best here because it holds its shape in the air fryer. I also like to drain it for about 30 minutes first to improve its texture.
I've found that tofu needs a few minutes longer than the peppers and onions, so I make the fajitas in 2 steps.
If everything goes into the air fryer together, the peppers can soften or catch before the tofu has had a chance to firm up. I prefer cooking the tofu first until it just begins to crisp, then adding the seasoned vegetables for the final few minutes.
That way, you get lightly crisp tofu and peppers that still have some bite.

Peppers & Onions
Slice them into thick strips rather than very thin slices. Thin pieces can soften too quickly in the air fryer. You want them colourful, juicy and still a little crunchy.
Fajitas seasoning
A shop-bought fajita spice mix is completely fine - I like the Schwartz brand. When I prepare a homemade seasoning, I use equal parts red chilli powder, cayenne, paprika, cumin-coriander powder, garlic powder, onion powder and oregano.
Crushed tomatoes
I find the crushed tomatoes help the seasoning cling to the tofu and vegetables, so the filling tastes coated rather than dry. I use either passata or crush tinned tomatoes.
Let's Make Air Fryer Vegetable Fajitas

- Season the tofu: Add the cut tofu to a bowl with half the fajita seasoning and oil. Toss until the tofu is lightly coated.

- Air fry the tofu first: Place the tofu in the air fryer basket in a single layer. Cooking the tofu first gives it time to firm up before the vegetables go in.

- Cook until the tofu starts to crisp: Air fry until the tofu is just beginning to crisp at the edges. It does not need to be fully crispy yet.

- Season the peppers and onion: While the tofu cooks, toss the peppers and onion with the remaining seasoning, oil, salt and crushed tomatoes.

- Add the vegetables to the tofu: Add the seasoned peppers and onion to the air fryer basket with the part-cooked tofu. Spread everything out as much as you can.

- Air fry until colourful and crunchy: Cook for a few more minutes until the tofu is hot and the vegetables are cooked but still have bite. The peppers should stay colourful and slightly crunchy, not soft.

How I serve Vegetable Fajitas
I usually serve these air fryer veggie fajitas in warm tortillas with lime, coriander and something creamy on top. Creamy Greek yogurt coriander sauce is the easiest option, but sour cream and chive dip or yogurt garlic sauce also work if you want something cooling.
For freshness, add mango pico de gallo, mango avocado salsa or strawberry avocado salsa. For a more filling meal, skip the tortillas and serve the tofu and peppers over Mexican cilantro lime rice as a fajita bowl.
If you want sides, keep it air fryer-friendly with Mexican air fryer cheesy potatoes, air fryer carrot fries or air fryer avocado fries (made without egg).
To finish the meal, I’d go for a cold mango mocktail, fresas con crema or air fryer grilled pineapple.
Storage
Store leftovers in an airtight container and keep in the fridge for up to 3 days. Reheat in the microwave or the air fryer.
I do not recommend freezing this recipe - the tofu and cooked veggies will loose their texture in the freezer and upon thawing.

Air Fryer Veggie Fajitas
Ingredients
- 1 pack firm tofu 400 grams
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 large onion
- 3 tablespoon fajita spice mix
- 3 tablespoon crushed tomatoes or puree
- salt to taste
- 2 tablespoon oil
Instructions
First prepare your veggies and tofu.
- I allowed 1 pack firm tofu to drain for 30 minutes then cut it into squares.
- Slice the 1 large red bell pepper, 1 large yellow bell pepper and 1 large onion into thick strips.
- In a large mixing bowl, add the tofu, 1 ½ tablespoon fajita spice mix and 2 tablespoon oil. Toss to coat well.
- Place in a preheated air fryer basket at 200C/400F in a single layer.
- Air fry the tofu until it has just begun to crisp up or for around 3-5 minutes.
- Whilst the tofu is cooking, mix the peppers and onions 1 ½ tablespoon fajita spice mix 1 tablespoon oil, salt and 3 tablespoon crushed tomatoes. Combine well.
- Once the tofu is starting to crisp, add in the peppers and onion mixture and air fry everything for another 4-5 minutes at 200C/400F. You want to keep the veggies crunchy rather than soft so do not overcook.
