What is Sooji or Rava? 

Sooji, Suji or Rava is Semolina, which is a coarse flour made of a hard type of wheat, durum wheat. In the UK there are two types of semolina available coarse and fine and usually available in a golden yellow colour. 

Recently, Indian groceries started selling Indian semolina which is almost white in colour and also available in a coarse and fine variety. 

Both types of semolina have earthy and nutty flavours and are high in fibre and protein than normal wheat flour, however, people with high sugar level should have it in moderation. 

Semolina is a versatile ingredient, can be used in sweet and savoury recipes. We have used in making Instant Sooji Matar Dhokla and Lemon Rose Pistachio Semolina Bundt Cake

Ingredients for Coconut and Saffron Halwa:

Semolina - I used fine white semolina. You can also use coarse semolina/rawa/suji.

Coconut Milk - we used thick variety.

Desiccated Coconut

Mawa - I used homemade mawa/khoya

Sugar - white granulated sugar

Ghee - I used homemade desi ghee

Saffron - 10/12 threads soaked in 1 tbsp warm milk

Mixed nuts - Charoli, and Pistachios and Almonds (slivered)

Cardamom Powder

Vegan Coconut Halwa


Make vegan by using coconut oil instead of ghee.

Omit the mawa.

Soak the saffron in 1 tbsp coconut milk rather than dairy milk

How to make the best Coconut Halwa

1. In a saucepan add sugar and water, bring it to boil on medium heat. Once the sugar totally dissolves turn off the heat. Leave it aside. Soak saffron in warm milk and leave it aside. 

2. In a heavy-based frying pan or kadai heat ghee and add semolina. 

3. Roast it on low heat until light pink and aroma start wafting, keep stirring continuously. 

4. Add sugar syrup and mix well, then add khoya and combine well and make sure there are no lumps left.

5. Now add charoli, coconut milk, coconut and keep mixing until ghee starts leaving the mixture.

6. Add cardamom powder, ghee, saffron milk and mix well.

7. Add slivered nuts and turn off the heat.

Can I use fresh coconut?

Absolutely, yes!  


Tips:

Keep the heat low when roasting the semolina and take your time with roasting it

Wait until the semolina turns light pink and aromatic. You can then move onto the next step.

Use full-fat versions of the ingredients for the creamiest halwa.

Serving and Storing:


You can make this siro in advance. It keeps well in the fridge for up to 2 days - keep away from other strong-smelling food

Serve either warm or at room temperature for the best flavour.

This siro or halwa can be served as Prasad for any holy occasions or ceremonies.

Also can be served as dessert after having a spicy Indian meal or served in a Gujarati Thali.

Sometimes we pair it with Aloo Chole (potato and chickpea curry without onion-garlic) and Poori (deep-fried Indian flatbreads) for Sunday brunch.

COCONUT HALWA | SOOJI NARIYAL KA HALWA

This creamy and luscious sooji ka halwa is flavoured with aromatic spice saffron and delicate flavours of coconut milk. Comes together only in 15 minutes!
Prep time: Cook time: 15 MTotal time: 15 M

Ingredients:

  • 1/2 cup semolina
  • 1/2 cup sugar
  • 1/4 cup ghee + 1 tbsp 
  • 1/2 cupkhoya - milk solid ( used home made )
  • 3-4 tbsp desiccated or  fresh grated coconut
  • 1/2 cup coconut milk 
  • 1 cup of plain water
  • 10-12 threads of saffron soaked in 1 tsp. milk
  • 1/2 tsp cardamom seed powder
  • 2-3 tbsp slivered almonds and pistachios to decorate
  • 1 tbsp. Cuddapah Almonds. 
Equipment/Tools
  • Kadai or heavy-based frying pan
  • Spatula 

Instructions:

  1. Heat sugar and 1 cup water in a saucepan, just one boil enough. Don't need to make syrup.
  2. Heat ghee in the heavy bottom pan and start roasting semolina.
  3. Keep the heat very low and stir continuously to prevent any burn or sticking at the bottom of the pan.
  4. It will take about 8-9 minutes, roast till semolina gets very light brown colour.
  5. Add sugar water and khoya and keep mixing making sure there are no lumps.
  6. Now add charoli and cashew nuts, coconut and coconut milk, keep mixing till you see ghee separating from the mixture.
  7. Now add cardamom powder, and add saffron water and 1 tbsp ghee.
  8. Cook another minute or so and turn off the heat.
  9. Transfer in a serving bowl or plate and garnish with slivered nuts.

Notes:

Cuddapah Almonds known as charoli ( chironji ) nuts. Latin name is Buchanania lanzan, available in any Indian store.

If ghee is not available use unsalted butter.

We have used 1/4 cup of ghee but the amount can be taken more up to 1/2 cup.
