This thought will come across your mind when you take a spoonful of this delicious Roasted Thai Cauliflower Soup. This 100% vegan and paleo soup is just perfect for when you are tired of pumpkin, squash or sweet potatoes. This velvety, hearty and creamy soup with Thai flavours is perfect for a starter or as a main.

A week or so ago I sent hubby to pick up some flowers for Diwali prayers, he came home with four huge cauliflowers and gave it to me. I was just about to open my mouth but he quickly gave a bunch of flowers to save himself from the telling off :D 

As I ended up having four huge cauliflowers in my fridge, I recreated dishes like Langarwali Aloo Gobi, Tandoori Cauliflower and Chickpea Taco and Cauliflower Cheese, and after all that I still had one cauliflower left which I used in making this hearty and flavourful soup. As we are a big fan of comfort and healthy food. We love the Thai flavours and cauliflower, so here is a marriage of the two! My Roasted Thai Cauliflower Soup, a variation of my Thai Style Squash Soup and Thai Style Squash and Sweet Potato Noodles Soup.

WINTER AND SOUP


Soup is more than just winter food. Cooler temperatures make you crave hunkering down with mugs of hot and comforting soups. Also in this season most of us catch viral infections through coughing and sneezing and nothing is better than a comforting bowl of soup to nourish the body. It's fuel for our body to survive the winter, excellent to warm up the body. Soups provide wonderful hydration and much-needed liquid as our water intake becomes lesser during cooler months. Soups are easy to digest whether it's veg or non-veg and the soups prepared with plenty of vegetables and spices helps to cure many winter illnesses.

ROASTED VEGETABLE SOUPS


Soups always taste better when vegetables are roasted, roasted veggies add so much flavour. When you roast the veggies, sugar of the vegetable caramelises and that flavour enhances the taste of the soup. The great thing I like about roasted vegetable soup is that you can roast the veggies ahead of time and store them in the refrigerator for a few days. Then you'll need only 10 minutes to prepare a soup on busy days.

LET'S TALK INGREDIENTs


  • Cauliflower - You will need white dense and fresh cauliflower for the soup which is available everywhere. Frozen cauliflower won't work for this recipe.
  • Thai Paste - Good quality Red Thai paste homemade or shop bought works fine.
  • Coconut milk - homemade or tinned.
  • Onion, garlic and carrots must for this recipe and add a perfect amount of sweetness.
  • Turmeric to add some colour to the soup.
  • Vegetable stock to enhances the flavour of the soup.
  • Lime juice and freshly chopped coriander 

This 100% plant-based soup is great to have on hand. It is creamy and velvety without any dairy products. To make a substantial meal add some kind of protein to it such as tofu croutons or roasted chickpeas. This soup freezes so well and the flavours develop as it sits, even the next day it tastes so delicious.

So hey guys now that you know so many benefits about this soup, don't raise your eyebrows if your husband brings a huge cauliflower for you without confirming with you, always this soup can be on the table!

Roasted Thai Cauliflower Soup

This super creamy and velvety roasted cauliflower soup with Thai flavours is perfect for autumn and wintery chilly nights. Vegan, Gluten-free and easy to follow recipe.
prep time: 10 minscook time: 50 minstotal time: 60 mins

ingredients

500 g cauliflower florets
3 TBSP Thai red curry paste*
200 g carrots diced 
3 TBSP olive oil
1 big onion roughly chopped 
4 garlic cloves
1" ginger chopped
1/2 TSP. turmeric powder**
Sea salt
400 ml coconut milk 
500 ml vegetable stock
1 TBSP. lime juice

For the Garnishing
A handful of freshly chopped coriander
Red Chilli flakes

instructions

Preheat the oven to gas mark 6-7.
Place cauliflower florets on a baking tray, drizzle some olive oil and sea salt.
Roast for 30-35 minutes or until lightly browned and soft.
Heat oil in a pan, add onion garlic and saute for few minutes.
Add chopped carrots and ginger, cook for 8-10 minutes.
Add Thai curry paste and turmeric powder, further cook for a minute or so.
Now add roasted cauliflower and mix well.
Then add vegetable stock and bring the soup to boil.
Place everything into Froothie Optimum Vac 2 Air Vacuum Blender and blend until you have smooth pureed soup.
Pour the pureed soup into the saucepan, add coconut milk and bring the soup to boil.
Check the seasoning, add lime juice.
Mix well, serve hot in a serving bowl.
Garnish it with freshly chopped coriander and red chilli flakes if using.
Enjoy with a crusty bread roll or wholemeal toasts. 

NOTES:

* Adjust the spiciness according to your liking.
** You can use fresh turmeric too, if available, wash, peel and add.
