Broken Wheat and Tofu Cutlets
Crisp, golden cutlets made with broken wheat (Dalia) tofu, roasted peanuts, sesame, and warming spices. Perfect as a tea-time snack or served with chutney for a lunch.
Ingredients
- 250 grams broken wheat small grain size
- 300 grams tofu drained
- 50 grams roasted peanut powder
- 25 grams roasted sesame powder
- 2 to 3 slices toasted bread powdered
- 3 to 4 tablespoons coarse semolina
- 1 tablespoon garam masala
- 1 tablespoon red chilli powder
- ½ teaspoon turmeric powder
- 2 tablespoons crushed green chillies and ginger
- 2 tablespoons lemon or lime juice
- 3 to 4 tablespoons fresh coriander finely chopped
- 1 teaspoon red chilli flakes optional
- 3 to 4 tablespoons oil for shallow frying
- salt to taste
Instructions
- Rinse the broken wheat and soak it for at least 30 minutes.
- Cook the soaked broken wheat in a pressure cooker until soft but dry. Allow it to cool completely.
- Crumble or mash the tofu and ensure it is completely dry.
- In a large mixing bowl, combine the cooked broken wheat, tofu, peanut powder, sesame powder, bread powder, garam masala, red chilli powder, turmeric powder, crushed green chillies and ginger, salt, lemon juice, and coriander.
- Mix everything well to form a firm dough-like mixture.
- Cover and refrigerate for about 1 hour.
- Divide the mixture into 8 to 10 equal portions and shape into round patties.
- Coat each patty with semolina and red chilli flakes.
- Lightly brush with oil.
- Heat a tawa or non-stick griddle and shallow fry the cutlets until golden brown on both sides and heated through.
- Serve hot.
Notes
- Ensure the cooked broken wheat is dry before mixing to help the cutlets hold shape.
- These cutlets can also be deep-fried if preferred.
- Serve with mint chutney, tamarind chutney, or ketchup.
