Nimbu Mari Peanuts - Lemon and Blackpepper Peanuts
These crispy roasted peanuts are the perfect balance of tangy, spicy, and savoury flavours. Coated in fresh lemon juice, black pepper, and a hint of chilli, they make an easy homemade snack.
Ingredients
- 250 grams raw peanuts
- salt to taste
- 1 teaspoon oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon freshly ground black pepper
- ½ teaspoon red chilli powder optional
- ½ teaspoon sugar
Instructions
- Preheat the oven to gas mark 2.
- In a heavy-bottomed pan, dry roast the peanuts for 7 to 8 minutes.
- Rub and peel the skin off half of the peanuts.
- Whisk together the oil, lemon juice, salt, red chilli powder, sugar, and black pepper.
- Add the peanuts and toss well to coat.
- Place the peanuts on a baking sheet and spread them in an even layer.
- Bake for 35 to 40 minutes, stirring occasionally, until they are dry.
- Allow them to cool completely.
