INSTANT POT KAJU KATLI/BARFI
You may wonder what the point is in using the Instant Pot or electric pressure cooker to make Kaju Katli.
Honestly, it will make your life so much easier! You do not need to worry about getting the consistency of the sugar syrup or worry about stirring by the hob. Just let the Instant Pot handle everything!
Katli vs Barfi
Kaju Katli or Kaju Barfi?
Though the words are used interchangeably, there are some differences.
Barfi is thicker and the thins are called katli
Barfi will be cut into squares and katli are shaped in diamonds.

Ingredients

Ground Cashew or Almond - we have used readymade ground cashew, (it was little darker) if not available make cashew powder at home using raw and unsalted cashews.
Sugar - white regular granulated sugar
Ghee - You won't need more than a couple of tablespoons.
Edible silver foil - optional
How to make Instant Pot Kaju Katli/Barfi
Keep all the ingredients and tools ready as this recipe needs to be prepared fast and quick.
⬧In an inner pot of Instant pot mix sugar and water.
⬧Close the lid.
⬧Select HIGH PRESSURE for 10 minutes, secure the valve on sealing position.
⬧When it's done release the pressure manually immediately.
⬧Add ghee and cashew/almond powder and mix quickly.
⬧It will go thicker in minutes. No need to cook further.
⬧Transfer the mixture onto a greased parchment paper or a silicone mat and knead the dough for 2-3 minutes so it becomes smooth.
⬧Cover it with another parchment paper and roll it into a round or square shape into desired thickness.
⬧Apply silver foil if using, let it cool for a minute, by now the katli/barfi should be set but little warm.
⬧Gently cut it into the desired shape using a sharp knife or pizza wheel cutter.
⬧Can be served straight away or once cooled totally store in an airtight container.
Tips for Instant Pot Kaju Katli:
Here are some troubleshooters and tips:
If you notice that your katli mixture is not thickening, add a little more cashew/almond flour and mix again
If the mixture seems too dry, add a tablespoon of water and mix again.
You do not want the mixture too dry whilst it is hot as it will solidify further as it cools. You may get cracks if it is too dry.

Sooji Gujiya/Ghughra (semolina Gujiya)

INSTANT POT KAJU/BADAM KATLI
Equipment
- Instant pot
- Pizza cutter or sharp knife
- Rolling Pin
- Greaseproof paper
- Cutting board
- Spatula
Ingredients
- 4 ¼ cup cashew or almond powder
- 2 cup regular sugar
- 2 tablespoon ghee
- ½ cup water plus 4 tablespoon more water
- Edible silver foil
Instructions
- Arrange the stainless steel pot in the Instant Pot.
- Add sugar and water, mix it with a spatula.
- Close the lid, secure the valve on the sealing position.
- Select HIGH-PRESSURE COOKER for 10 minutes.
- Meanwhile, grease the paper with ghee and leave it aside.
- Once cooker beeps, turn off the plug.
- Immediately release the pressure and open the lid.
- Add ghee and cashew powder and mix well.
- Keep stirring, after a couple of minutes the mixture will go thicker.
- Transfer it on the greased paper, knead the mixture (see video) to make it smooth as possible for 2-3 minutes.
- At this stage, you can divide the dough for katli and barfi if you like.
- Make a round shape, cover it with another paper.
- Roll in into desired thickness.
- Apply silver foil, if using.
- Leave it aside for a couple of minutes.
- Cut into the desired shape.
- Can be served straight away or store in an airtight container after cooled down totally.
- Enjoy!

Now, that's a treat! These Kaju look SO good (Am I writing the name the right?). They remind me of Greek halva but that is made from semolina. I love how they look, the ingredients, everything!
