I bet you didn't think you'll ever read those words in one sentence! Hear me out. This blueberry smoothie is made with blended cooked buckwheat and cashews. Full of berry flavour and the buckwheat and cashews make it extra thick and creamy.

This Blueberry Smoothie will put a spring in your step
Hello smoothie! It's one of my favourite breakfast options. It's usually something quick and last minute, like this tropical smoothie, but sometimes I like to put in a little more effort.
I add cooked buckwheat which blends down into a soft oatmeal type consistency. Use fresh or frozen blueberries and banana for fruit. I do raw cashews which are so creamy and plain yogurt and milk. I like adding some seeds too, to make it wholesome - chia and linseeds or hemp.
Have it in the morning with eggless mango pancakes or tasty eggless air fryer french toast sticks. Alternatively, go down the savoury route with Indian seviyan (vermicelli) upma. It's pretty filling too thanks to the variety of ingredients, so you can definitely take this with you on your morning commute.

Blueberry Cashew Buckwheat Smoothie
Ingredients
- ¼ cup cooked buckwheat
- ½ cup blueberries fresh or frozen
- 3 tablespoon cashew
- 1 tablespoon chia seeds
- ½ banana
- ¼ cup plain yogurt
- ½ cup skimmed milk
- 1 tablespoon linseed or hemp seeds
Instructions
- Place all ingredients into a blender and blend until smooth. Add more milk if required to thin out.
- Serve immediately.

My Mum is Russian so I grew up with buckwheat being on the menu almost every morning. We always had and sometimes still have buckwheat porridge for breakfast. I have never tried adding buckwheat to drinks though but It's something I will definitely try.
