These banana chips made with raw green Keralian banana are so delicious. Just a sprinkle of cracked black pepper takes these snacks to a whole new dimension! Either air fry or deep fry for the best texture with few ingredients.

AIRFRYER BANANA CHIPS


These banana chips are vegan and gluten-free making them great for many different dietary requirements. Unlink some shop-bought banana chips, these are super fresh and also have the perfect amount of crunch.  No more having to check for loose teeth ...  They are also healthier and preservative-free.  

I love snacking on banana chips during the day, either when I'm busy with work or during downtime. The air fryer is a great gadget to get banana chips ready in no time.

What is Banana Chips/Plantain Chips?


Banana or Plantain chips are a deep-fried crispy snack or dish that is prepared with raw banana. Raw banana or plantain are cut into thin chips or wafer then deep-fried in oil and flavoured with basic spices.

In South India, these chips are cooked in coconut oil and served with a meal or consumed as a snack. 

In Gujarat, these are known as Kela/Kera Na Khadkhadia or Kela Ni Wafer these are flavoured with various spices but consumed only as a snack. BTW Khadkhad means noise, these chips or wafers make noise whilst eating.

In Carribian countries plantain chips are hugely popular and they are flavoured with spices or made sweeter. 


­čŹîIngredients for Crispy Air fryer Banana Chips


Raw Kerala banana  - I have found that the best banana to make these chips is raw bananas that come from Kerala, South India. These Keralian raw bananas known as Nendran Bananas. (Owner of this Shop told my mum) also much cheaper than Uganda Matoke. 

We have previously made banana chips with matoke or raw banana from Uganda, Africa which did not make good chips. 

You can also use plantains.  

Oil - we used coconut oil which works really well to give a crisp texture and brilliant flavour

Turmeric - lends some colour and flavour to the chips. 

Salt

Black pepper - freshly ground fine black pepper. 

How to peel Raw Banana or Plantains?


Make sure the banana or plantains you get are green and raw. Apply little oil on your hands as they are a little sticky when peeled.

Due to its hard skin, they are a little harder to peel. Use a sharp knife.

First, remove the top then slice every ridge to remove the skin or soak them in the water for 30 minutes to one hour first, then slive the ridges.

Homemade Kerala Banana Chips/Plantain Chips with Coconut Oil

●Heat the coconut oil in a kadai over medium heat - the temperature should be 190C. 


●In a bowl with 200ml water, add salt and turmeric powder. Mix well and set aside.

●With a sharp knife peel the banana skin and make very thin slices using a mandolin.

●Carefully, add the slices into the hot oil and turn the heat down to medium. 

●You'll see lots of bubbles. 

●Once they reduce by half, add 1 TBSP of the turmeric and salt solution to it. 

●Be extra careful at this time as the oil may spit!

●Fry until almost all the bubbles disappear without the chips going brown.

●Remove with a slotted spoon, transfer onto kitchen paper, and drain.

●Sprinkle black pepper and salt over the chips

●Let the chips cool and serve them with a cold beer or soft drinks!

Variation

You may add red chilli powder or paprika instead of black pepper powder.

For a change, I think cinnamon, ginger or nutmeg powder would work well too. 

Season the chips with the herb salt or Himalayan salt. 

For a sweeter version drizzle some melted chocolate, caramel sauce or sprinkle some cardamom or cinnamon sugar in the end while they are HOT. 

Serving Suggestions


These banana chips are so good as it is, but one can serve with any kind of dips or chutney.

Serve as a nibble with cold beer or drinks such as Virgin Cardamom Mojito , Non-alcoholic Green Apple Martini or Virgin Mixed Berry Caipirinha 

Serve them in an Indian thali if you don't have popdum or any other wafers. 

Storage

Allow banana chips to cool down completely before storing them in an airtight container. 
They will stay crispy and fresh for 1 week. 


How to make Airfryer Banana Chips step by step

●Take raw bananas or plantains. 

●Mix turmeric powder and salt in the water. Peel the skin with the sharp knife and leave it in water for 10-15 minutes so they absorb the flavours and to prevent them turning darker. 

●Pat dry the banana using clean kitchen tissue/paper.

●With the help of mandoline make thin slices of the banana or use a very sharp knife if don't have mandoline. 

●Meanwhile, preheat the air fryer at 300F or 180C for 5 minutes.

●Coat banana chips into the coconut oil. Make sure all the chips are evenly coated.

●Layer the chips in one layer in the basket. 

●Air fry the chips between 10-12 minutes. Shake a couple of times in between. 

●Once done remove and sprinkle black pepper. 

●Make a big batch and store for another time.

AIR FRYER BLACK PEPPER GREEN BANANA CHIPS

Healthy and guilt-free raw banana chips. These 5 ingredients chips make a delicious snack that is so easy to make in the air fryer.

Ingredients:

  • 4 raw bananas or plantains
  • 2 tbsp. Coconut oil
  • 1 TSP salt
  • 1 TSP turmeric powder
  • 1 TSP black pepper powder
Equipment/Tools
  • Air fryer
  • Mandoline 
  • Sharp knife

Instructions:

  1. Mix turmeric powder and salt in cold water. 
  2. Peel the skin with the sharp knife and leave it in water for 10-15 minutes so they absorb the flavours and to prevent them turning darker.
  3. Pat dry the banana using clean kitchen tissue/paper to remove excess moisture.  
  4. With the help of mandoline make thin slices of the banana or use a very sharp knife if you don't have mandoline.
  5. Meanwhile, preheat the air fryer at 300F or 180C for 5 minutes.
  6. Coat banana chips into the coconut oil. Make sure all the chips are evenly coated with the oil.
  7. Arrange the chips in one layer in the air fryer basket.
  8. Air fry the chips between 10-12 minutes. Shake the chips a couple of times in between. (usually, air fryer beeps at the half time)
  9. Once done remove and sprinkle black pepper and salt.
Microwave Banana Chips
  1. Grease microwave-proof plate with oil. 
  2. Arrange the oil-coated chips in one layer for even cooking.
  3. Microwave on HIGH for 2-3 minutes, this time depending on the power of your appliance. 
  4. Keep an eye on it. 
  5. Sprinkle pepper powder and salt if necessary. 

Notes:

Try to make chips as soon as you bring the bananas at home. Don't have turmeric powder? No problem at all. Just use salt, you may add some lemon juice if you like. It will further enhance the flavours. Make sure all the slices are cut into the same thickness for even cooking. If the chips are cut into thick size, there will be more cooking time. Make sure to keep an eye on the chips in the last few minutes as they can burn easily just in few seconds. If you are using an oven to make these, arrange them on the baking sheet in one layer and bake for 20 minutes. Allow them to cool properly, as they go crispier whilst cooling.
