VEGAN WHITE BEAN BRUSCHETTA

Vegan White Bean Bruschetta is a delicious Italian starter. Thick slices of toasted RYE sourdough bread are topped with White Kidney beans, sundried cherry tomatoes, green pesto, and extra virgin olive oil. Creamy Cannellini beans lend a nutty, earthy flavour whilst lashings of extra virgin olive oil add a fruity aroma.

What is your morning ritual? I know what mine is. Snooze the alarm a couple of times then get up finally to have some breakfast. With my eyes still half closed, I pop a slice or two of bread into the toaster and spread on some peanut butter. A quick cup of tea or juice, its time to get ready and leave! We don't tend to pay much attention to our toaster, but without it, I'm sure a lot of us would be going hungry in the morning!



To toast our thick rye sourdough bread, we used the Drew & Cole 2 Slice Toaster.



We needed a toaster that could handle the thick slices of bread to make the Bruschetta. The toaster has extra wide slots to allow for thick bakery breads, crumpets, bagels and more.

Often, as I am at university, I buy a loaf of bread and then freeze it as I can't eat the whole loaf by myself. This toaster allows me to toast from frozen or quickly reheat which has proved to be very handy. With the reheat setting, I don't have to start again from scratch but simply reheat the toast without having to fully re-toast it again.



The toaster has 7 browning levels and so allowing a lot of variability in whatever you want to toast. It also has a lift and check lever to check on the progress of toasting to get your toast exactly the way you like it without having to take it out - no more burnt toast!

It has a removable crumb tray which for me is such a big plus point as it allows for easy cleaning  - no more crumb build up.

WHAT IS BRUSCHETTA?


Let's first learn how to pronounce BRUSCHETTA - bruce-keta. In Italian Bruschetta means toasted bread with toppings, which can be made simpler or elaborate as you like it. For a base, just toast bread such as baguette or rustic artisan bread with olive oil and top it up with chopped tomatoes, fresh herbs and olive oil or for the main meal you can adventure and come up with innovative toppings. The possibilities are endless!

LET'S TALK ABOUT FLAVOURS OF VEGAN WHITE BEAN BRUSCHETTA!


We have this tangy and flavourful rye sourdough bread which has a heavier texture and natural earthiness. It is cut into thick slices and toasted. Sundried cherry tomatoes, fresh cherry or grape tomatoes, cannellini beans and pesto whirled up into a spread, and generously topped on golden toasted bread and served drizzle with extra virgin olive oil and VOILA!

Vegan Bread such as sourdough or baguette.
Cooked Cannellini beans aka White Kidney Beans.
Green Pesto prepared with basil, pine nuts, garlic and olive oil.
Fresh Cherry tomatoes and sundried cherry tomatoes.
Extra virgin olive oil and seasoning.

This vegan and OH-SO-DELICIOUS white bean bruschetta are so easy to whip up, healthy and perfect as a starter or snack. Can be done in less than 15 minutes.

ingredients:

  • 1 rye sourdough bloomer or any other bread sliced into 1" slices.
  • 250 g cooked white beans
  • 100g green pesto
  • 100g sundried cherry tomatoes
  • 50ml extra virgin olive oil
  • Salt
  • Freshly ground black pepper
  • Fresh chopped parsley and basil leaves

How to cook Vegan White Bean Bruschetta

  1. In a big bowl add beans, pesto (reserve a couple of teaspoons) olive oil, chopped fresh basil, and parsley leaves, check the seasoning. 
  2. In a toaster toast the bread, once done spread some pesto and drizzle little olive oil.
  3. Top it up with a spoon full of bean topping and garnish it with the fresh leaves.
  4. Serve immediately with your favourite drink.
  5. Enjoy! 

NOTES:

Red pesto can be used in this recipe.
Instead of sourdough, any other baguette can be used.
Topping can be made in advance and kept in the refrigerator.
