Last week in India, the IPL 6 opening ceremony was a gala affair with music, dancing - the full works! It was the most glamorous, spectacular and amazing show to be presented ! I am sure every die hard cricket fan waited for the whole year for those nail biting cricket matches to kick off. With the beginning of the IPL, our fun filled challenge Potluck party, Cyber Style does too !!

So today I have brought piqant and tasty Carrot and Green Chilli pickle for my friends :)
Surely, you hardly need telling that firstly you can't beat homemade pickle. The benefits of homemade over shop bought are common sense. You control exactly how much oil and salt that goes into the recipe. It is also less expensive to buy ingredients from scratch, and even though you argue time is money and cooking takes time, this recipe will at most take you 5 minutes to prepare. Trust me, that's a small price to pay!
I think that keeping a bottle of this pickle near the dinner table is great. The colour firstly adds to the appeal, making eating it more enjoyable. It enhances the flavours of the curries that I eat it with! Because there is no cooking and heat involved, the carrots retain their health benefits as no vitamins are destroyed!
Of course, homemade pickles may not necessarily last as long as shop bought, but I can assure you it won't be around for long!
You will need :-
- 3-4 medium carrots, washed, peeled and Julienne
- 7-8 fresh green chillies round cut pieces
- 3-4 tbsp Jalpur achar Masala
- 1 tbsp oil
Mix everything in a one bowl and leave it for 10-15 minutes.
Instant pickle ready to eat.
Enjoy with your main meal.
