Rajagira halwa without milk is a delicious dairy free Indian sweet recipe that comes together in less than 15 minutes. This farali melt in your mouth dessert is prepared with rajgira flour, making it suitable for a gluten-free diet. Ideal during vrat seasons such as Navratri, Shravan mas or Ekadashi.

Although this halwa is commonly prepared on Indian festivals such as Navratri, Shivratri, Janamasthmi or Ekadashi, it's easy enough to prepare any day of the week.

In Gujarat, rajgira halwa is known as rajgara no shiro.
Rajgira halwa is an authentic Indian dessert made of rajgira/amaranth flour. Usually, the flour is roasted in ghee, then milk and sugar is added. I've used coconut oil in place of the ghee and water instead of milk to keep this recipe suitable for vegan diets.
The halwa is then flavoured with cardamom and studded with slivered nuts and dried edible flower petals.
For the recipe with dairy, take a look at my rajgira sheera with milk which is luxurious and indulgent.
Serving ideas
Vegan rajgaro siro tastes best when served hot or warm but not cold. Also, in cooler weather, the coconut oil hardens and the halwa won't have a melt in the mouth finish. It's delicious on its own but I love to serve it alongside a farali meal.
I love it with farali dum aloo or this easy farali sweet potato shaak. Aother option is farali kand/ratalu bhaji and a side of farali buckwheat (kuttu) poori.

Rajagro shiro is my favorite and you're so right it comes together in a matter of a few minutes. With coconut oil instead of ghee it must be tasting a bit different, with a coconut flavor. Lovely clicks.
