Sweet Boondi (Meethi Boondi)
Sweet Boondi is a classic Indian sweet made from tiny fried gram flour pearls soaked in fragrant sugar syrup. Soft, juicy, and lightly spiced with cardamom, it is often enjoyed as a dessert or used to make boondi ladoo.

- Slotted spoon
Ingredients
Boondi
- 1 cup gram flour besan
- oil for deep frying
- 3 tablespoon almonds and pistachios chopped
Sugar syrup
- ¾ cup water for sugar syrup
- 2 cups sugar
- pinch orange food colour optional
- ½ teaspoon cardamom powder
Instructions
Batter
- Sieve the 1 cup gram flour and gradually add water to form a smooth batter with an idli batter-like consistency. Set aside.
Sugar Syrup
- In a pan, dissolve the 2 cups sugar in ¾ cup water.
- Heat until the syrup reaches a slightly stringy consistency.
- Add pinch orange food colour and ½ teaspoon cardamom powder.
- Remove from the heat and keep warm.
Boondi
- Heat oil in a heavy-bottomed kadai until very hot.
- Hold a perforated spoon (jharo) above the oil and pour 2 to 3 spoons of batter over it.
- Allow the batter to fall into the oil naturally to form small boondi pearls.
- Fry until golden, then remove using another perforated spoon.
- Clean the back of the jhar between batches to ensure perfect round boondi.
Soaking
- Add all the fried boondi into the warm sugar syrup.
- Let it soak for about 30 minutes until fully coated and softened.
- The boondi should feel slightly sticky when pressed.
Finishing
- Drain excess syrup if needed.
- Add sliced 3 tablespoon almonds and pistachios and mix well.
- Serve as is or shape into ladoos if desired.
Notes
- The consistency of the batter is key for uniform boondi.
- Ensure the oil is properly hot for perfect pearl-shaped boondi.
- Boondi can also be shaped into ladoos once soaked.
