My Chilli, Garlic and Lime Mogo/Cassava Chips are buttery inside but crispy outside thanks to the air fryer. Cassava chips are boiled with lime juice then tossed in a finger-licking chilli garlic masala so the flavour runs right through the centre of each piece. They're on permanent rotation in our kitchen.

Air Fryer Mogo That’s Actually Crispy and Full of Flavour
These chilli garlic lime mogo chips soothe my love for East-African food! I'm a die-hard fan of mogo in all varieties and these build on my tried and tested plain mogo chips recipe.
What makes this version stand out is the way the mogo is layered with flavour from the start. It’s boiled in seasoned water first, then tossed in a punchy chilli, garlic and lime mix before being air fried. That extra step makes sure the flavour isn’t just on the outside - it runs all the way through.
I was experimenting with mogo in the air fryer and I've come to the conclusion that it's a very good way to cook mogo. I've made little tweaks to the method overtime to get perfectly crispy results, and I'm thrilled to present it to you here.
I like to serve these with a mix of dips depending on everyone's mood: something tangy like tamarind sauce, a slightly sweet and sticky Asian zing-style sauce, or a spicy samosa sauce all work really well. Add a glass of masala soda on the side, and it turns into that perfect snacky spread that’s hard to stop going back to.
Fair warning though - make extra as these won't last long!

- Mogo - mogo is also known as cassava or yuca. It is available in fresh and frozen forms. I have used frozen mogo because it is already prepared into chips or chunks.
- Chilli - you will need red chilli powder and chilli flakes. If you only have one or the other then that is fine.
- Garlic - I have used garlic powder which is much simpler to work with. Pounded fresh garlic is good too.
- Lime - you need the zest and juice of a lime. Use lemon as an alternative
- Oil - oil is needed when boiling the mogo and also for air frying.
- My top tip is to use the oil generously when air frying. This is what will give the crispiest results.
- Turmeric powder - (optional) to give a yellow colour to the mogo.

Chilli Garlic & Lime Mogo Chips
Ingredients
For the Mogo Chips
- 500 grams mogo chips
- ½ teaspoon turmeric powder
- ½ teaspoon garlic powder
- 1 tablespoon lime juice
- ½ teaspoon oil
- 2 litres water
- salt to taste
For the Masala Mix
- 1 teaspoon red chilli powder
- A pinch of dried chilli flakes
- ½ teaspoon garlic powder
- Salt to taste
- 1 teaspoon lime juice
- ½ teaspoon lime zest
- 1 teaspoon oil
To Garnish and Serve
- Finely chopped coriander leaves
- Lime wedges
Instructions
Prepare the Mogo Chips
- In a large pan, add the water, salt, turmeric powder, garlic powder, lime juice and oil. Bring to a boil.
- Add the mogo chips and cook for 8–10 minutes, or until just tender.
- Drain and allow the chips to cool for 7–8 minutes.
Make the Masala Mix
- In a bowl, combine the red chilli powder, chilli flakes, garlic powder, salt, lime juice, lime zest and oil.
- Add the cooled mogo chips and toss well, ensuring all pieces are evenly coated.
Air Fry the Chips
- Preheat the air fryer to 205°C for 5 minutes.
- Place the coated mogo chips in the air fryer basket in a single layer.
- Cook at 205°C for 12 minutes, shaking the basket halfway through for even cooking.
- Once crisp and golden, remove from the air fryer.
- Transfer to a serving plate, garnish with chopped coriander and serve hot with lime wedges and sauce.
