Beetroot Mustard Tofu Rice (Spiced Basmati Rice)
A vibrant and flavourful rice dish made with basmati rice, grated beetroot, spiced tofu, and a punchy mustard base. Lightly spiced and aromatic, this is a wholesome vegetarian meal perfect for lunch or dinner.
Ingredients
- 2 cups basmati rice cooked
- 1 packet firm tofu drained and cut into cubes
- 1 cup beetroot boiled and grated
- 2 teaspoons mustard paste
- 4 tablespoons oil
- 1 tablespoon whole spices cloves, green cardamom, black cardamom, black peppercorns, cinnamon stick, and bay leaf
- 1 teaspoon caraway seeds or cumin seeds
- ½ cup onion finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- salt to taste
Garnish
- fresh coriander chopped
Instructions
- Drain the tofu thoroughly and cut into cubes.
- Heat oil in a heavy-bottomed pan or kadai over medium heat.
- Add the whole spices and caraway seeds, and allow them to crackle and release their aroma.
- Add the chopped onion and sauté until light pink and softened.
- Stir in the ginger-garlic paste and cook for a minute.
- Add the grated beetroot and tofu cubes, and mix gently.
- Add red chilli powder, turmeric powder, and mustard paste. Mix well to coat everything evenly.
- Cook for a couple of minutes to allow the flavours to combine.
- Add the cooked basmati rice and salt, then gently mix without breaking the rice grains.
- Cook for 2 to 3 minutes until the rice is heated through.
- Turn off the heat and garnish with fresh coriander before serving.
Notes
- Be gentle when mixing to keep the rice grains intact.
- You can adjust mustard paste quantity depending on how strong you like the flavour.
- Best served warm as a complete meal on its own or with yoghurt or salad.

The colour alone makes this rice such a showstopper on the table, and the way the beetroot softens into the rice along with whole spices tempering gives it such a lovely earthy sweetness that makes this one of my go to options whenever I need a quick and colourful one pot meal.
