We celebrate Christmas with the same enthusiasm as any Brits do, but when it comes to the food part we eliminate non-veg and poultry from the menu. I have not tried traditional Eggnog myself, however, when I and my brother were very young our Dad tried to feed us eggs in warm milk, (Indian parents for you)  but we both just couldn't tolerate the eggs, so in the end, he gave up.

TRADITIONAL EGGNOG


You just cannot imagine a Christmas eve without Christmas carols and a glass of eggnog. Eggnog is mainly served during wintertime, and historically known as milk punch.

It is sweet, rich and creamy and the main ingredient is Egg, thus it's eggnog. It is a mixture of eggs, milk, cream, sugar and sweet and warm spices such as cinnamon and nutmeg.

To make boozy eggnog whiskey or rum is added, but it can be served without alcohol too. Often served in dainty cups, hot or cold.

ABOUT THIS EGG-FREE NOG


We will call it 'NOG' as there is no egg in this recipe.

Now that Mum stopped eggs totally in her diet, all the traditionally egg-containing recipes are substituted with egg-free ingredients in our kitchen.


WHAT'S IN EGG FREE NOG?


  • Dairy milk - for rich nog I have used whole milk.
  • Nuts- Cashews lends so much creaminess and thicken up the nog.
  • Sugar - Granulates works fine, you can use honey, maple or agave syrup. 
  • Vanilla extract - Vanilla adds extra flavours.
  • Spices - cinnamon, nutmeg and a pinch of cardamom. 
  • Cream - Double cream to make nog extra rich and creamy.

Can I make dairy-free Egg nog?

Absolutely yes, you can make and enjoy vegan eggnog too, and you don't require any cooking in making it. Just use nondairy milk such as soy, coconut or almond, and nondairy cream. 

Soak cashews for 10-15 minutes in hot water.

Add everything in the high powered blender and blend until smooth and frothy. 

Can I leave out refined sugar?

Yes, replace normal sugar with pitted dates, date, maple or agave syrup.

How to serve Egg-free nog?

If you want to serve warm and frothy nog, serve as soon as you remove it from the heat and drink it right away.

If you like cold nog, bring it to room temperature then keep in the refrigerator for a couple of hours before serving.

How long does this Eggfree Nog will keep?

You can store this in the refrigerator for 5-6 days.

What spices are the best for Eggfree Nog?

Traditionally nutmeg and cinnamon are used but you may use clove, ground ginger, five spices or pumpkin spices. We have added cardamom in this recipe. If you really want to be adventurous why not try even Garam Masala.

What can I do with the leftover Eggfree Nog?

Leftover Eggfree nog can be used in making Cookies, Pancakes, Cheesecake, French toast or Bread Pudding.

BEST TIPS TO MAKE EGG FREE NOG


  • Always use a heavy bottom pan when working with milk, this will prevent milk from sticking to the base. Wash the pan with the cold water first before adding milk to it. 
  • Do not use stale or rancid cashews, it will taste bitter. 
  • Best to use fresh nutmeg and cardamom powder for this recipe. 

HOW TO MAKE THE BEST EGG-FREE NOG?


My version of Vegetarian Nog starts with soaking cashews in warm water overnight. In the morning blend it with little milk using a blender.

Then infuse the remaining milk with sugar, cinnamon, nutmeg, cardamom powder, and vanilla. Slowly bring mixture to a low boil. At this stage aroma of spices already takes you in a holiday mood.

Then add cashew milk into the hot milk mixture, and cook for another 3-4 minutes or it gets slightly thickened, but do not boil.

Turn off the heat and add the double cream, if making boozy, add rum or bourbon.

If you want to serve warm, serve in a small tempered cup or glass, add whipped cream and sprinkle nutmeg or cinnamon powder.

Bring the mixture to room temperature, then refrigerate until chilled.

When serving,  add whipped cream and sprinkle cinnamon powder.

If you're looking to the alternative to the traditional Eggnog, serve this there will be no compromising the flavours.

Deliciously creamy and irresistible Egg-free Nog is so easy to make.

ingredients:

Eggfree Nog
  • 100g raw cashews (soaked in warm water overnight or in HOT water 20 minutes)
  • 500 ml whole milk
  • 100ml cream
  • 5-6 TBSP sugar
  • 1/2 TSP cinnamon powder
  • 1/2 TSP freshly ground nutmeg
  • Pinch cardamom powder
  • 1 vanilla pod bean, split and seeds removed OR 1/2 TSP vanilla extract 
Toppings
  • Whipped cream
  • Ground nutmeg

instructions:

How to cook Eggfree Nog

  1. In a saucepan combine milk, sugar, vanilla, and all the spices powders.
  2. In a high powered blender grind the soaked cashews with a small amount of milk. 
  3. Heat it gently on low heat and bring it to boil.
  4. Add cashew mixture to it. 
  5. Cook the mixture on a low heat for 3-4 minutes.
  6. Turn off the heat, and add cream.
  7. Cool it down at room temperature, then keep in the refrigerator at least 2-3 hours to chill.
  8. Serve in a cup, top it up with whipped cream and sprinkle freshly ground nutmeg. 

NOTES:

The nog will be thickened more in the refrigerator.
