To make our Paneer Jalfrezi we used our Scanpan CTX 26cm Frying Pan sent by Haus.

The CTX range is manufactured in Denmark and is constructed with 5 layers to boost functionality and performance. The range is suitable for all hob types - including induction and is oven-proof for up to 260C. The non-stick coating is hard-wearing and can withstand the use of metal and steel kitchen tools.

I liked that the pan was lightweight, making it very easy to handle and that it was very easy to clean - little wipe with a sponge and soapy water was enough.

What Is Jalfrezi?


Love curries? Then you must have seen or ordered a Jalfrezi dish in Indian restaurants or takeaways, either non-veg or veg. It is one of the most popular flavoured curries you'll see in UK curry houses. Jalfrezi dishes are made either meat or vegetarian versions are made with vegetables, paneer or tofu.

Many internet articles suggest that Jalfrezi is a wonderful creation of Indian and Chinese cuisine where Indian flavoured dish is created with Chinese techniques.

Jalfrezi dishes were created by cooks of British Raj to use up all the leftovers by using Chinese stir-fried techniques. Instead of simmering meat and vegetables together for hours in a pot like most Indian curries, the jalfrezi ingredients are quickly stirfried in a pan without closing the lid.


What Is Paneer Jalfrezi?


Paneer Jalfrezi is a delightful and flavoursome curry with tender chunks of paneer in a spicy semi-dry tomato sauce with stir-fried green peppers and onions. The softness of paneer, crunchiness of green peppers and little tanginess from the tomatoes and the right level of spiceness blend so well in this curry.

What Goes Into Restaurant Style Paneer Jalfrezi?


Paneer, an Indian cottage cheese. Homemade is best but store-bought works fine too. If you can't find paneer, and don't have time to prepare you may use halloumi cheese instead.

Green pepper or bell pepper is also known as capsicum and is a nice addition to this curry. Adds complementary flavours, colours and crunchiness.

Onion, garlic, ginger and tomatoes and tomato puree to add extra flavours and bulk up the dish.

Basic spices such as cumin, nigella, mustard, fenugreek and fennel seeds (panch phoran) garam masala, red chilli powder, turmeric powder and coriander powder, also a pinch of kasoori methi (dried fenugreek leaves) bring out delicious and restaurant-style flavours to the dish.

Adding, a small pinch of sugar adds little sweetness to the curry and balance it out the tartness of tomatoes.

To finish up the dish a dash of lemon juice, ginger juliennes and freshly chopped coriander works so well.

How To Make Restaurant Style Paneer Jalfrezi?


Basically, paneer jalfrezi is a stir-fry, so easy and quick dish to make. So first finish all the prep then start cooking. Start by sauteing paneer first in hot oil for a few minutes, do not overcook, remove once you see light brown spots on it.

Then panch phoran is added to the HOT oil, wait until they crackle to release the flavours. Then onion, ginger and garlic are sauteed and caramelized before thinly sliced vegetables added and stir-fried without losing their colour, texture and crunchiness. Then the vegetables are seasoned with spices and masala and salt. Also, a pinch of sugar to balance out the tartness of the tomato. Finish it off with the squeeze of lemon for freshness.

What To Serve With Paneer Jalfrezi?


For a weeknight meal you can do with Roti, chapatti, Garlic and Coriander Naan or poori and some salad. If you are having friends around you may add the following to make a complete meal:
Saag aloo
Dhaba Style Daal Fry
Ghee Rice
Gajar Ka halwa.

A finger-licking restaurant style paneer jalfrezi is a vegetarian, easy and quick dish. It is a phenomenal vegetarian curry dish with hearty chunks of paneer and comes together in 15 minutes.

ingredients:

Equipment/Tools
  • Nonstick frying pan
  • Spatula 
  • Knief
  • Chopping board
Paneer Jalfrezi
  • 200g paneer batons 
  • 1 big green pepper/bell pepper/capsicum thinly sliced
  • 1 medium tomato  sliced
  • 3 TBSP tomato puree/passata 
  • 1 medium onion thinly sliced
  • 1 TSP. minced ginger-garlic
  • 1 green chilli sliced (optional)
  • 3 TBSP. oil
  • 1 TSP. Panch Phoran/Five spices 
  • Salt to taste
  • Pinch dry fenugreek/kasoori methi
  • 1 TSP Red Kashmiri chilli powder
  • 1/4 TSP turmeric powder
  • 1/4 TSP garam masala
  • 1 TSP ground coriander 
  • Pinch sugar
  • Lemon juice
Garnishing
  • 1/2 TSP kasoori methi
  • 1 TBSP finely chopped coriander leaves
  • Lemon/lime wedges
  • 1 TSP ginger juliennes

instructions:

How to cook Restaurant Style Paneer Jalfrezi

  1. In a pan heat oil, shallow fry paneer batons until golden brown on all the sides.
  2. Remove it and keep it aside on a plate.
  3. In the same hot oil, add panch phoran and let it crackle.
  4. Add sliced onion and saute till light pink.
  5. Now add minced ginger-garlic, let it cook for a few seconds.
  6. Add green peppers and green chilli if using.
  7. Stir-fry the veggies for a couple of minutes, then add fresh tomatoes and tomato puree.
  8. Add all the spices and masala along with kasoori methi. 
  9. Make sure the masala doesn't burn if you think it's sticking add a couple of spoons water. 
  10. Add salt and sugar.
  11. Mix well, add shallow fried paneer, lemon juice and gently mix everything.
  12. Serve hot in a serving bowl, garnish it with the freshly chopped coriander, kasoori methi, lemon wedges and ginger juliennes. 

NOTES:

Only cumin seeds can be used if panch phoran is not available.
