Hello Summer,
Let me greet you with this glorious salsa because you inspired me to whip up this recipe with all the tropical fruit we have been eating all week.  It is a delicious combination of sweet, spicy, tangy, crunchy and oh so fresh. This salsa makes a delicious topping or dip and is a perfect side to all your Mexican favourites such as Low-fat black bean and sweet potato quesadilla .

Since last few days, we are gorging on all sorts of tropical fruit including family's beloved Alphonso mangoes. This year lucky we're enough to get VERY GOOD produce, so we are not using any fruit in cooking or baking but enjoying as fresh as possible. Also, the warm weather is helping fruit ripen so quickly so I am incorporating fruit in my dishes - but those without cooking with heat. It just so turns out that salsa is the perfect dish to make the most of the produce! This recipe throws in everything but the kitchen sink and we had great fun putting this together, it's a no brainer!

TROPICAL MANGO & PASSION FRUIT SALSA



Ohhh yes, this is the GOOD stuff, Seriously! We are a fan of guacamole, Strawberry Avocado salsa and Cumin Mango Salsa, with all sorts of combined juicy tropical fruit in this recipe, I would say let's have a party!
Just peel, chop, mince or dice and enjoy the fresh flavours and fragrances of lime juice, coriander and tropical fruit. 


LET'S SEE THE INGREDIENTS 



It's a tropical salsa, so think of all tropical fruit

Mango - I have used Alphonso mangoes from India but you can use any. 
Pineapple - Currently they are in season and on great offers so I buy fresh but one can use tinned ones and save time on peeling and chopping.
Passion Fruits - adds a little crunch and tangy flavours.  
Avocado - adds good fat.
Red Onion - adds colour, texture and sweet flavours to the salsa.
Jalapeno - with sweet and tangy flavours, we definitely need to add some kick to this salsa.
Lime - Juice of lime is a backbone for this recipe if you can't find, use lemon but do not skip dressing up your salsa without either of these two.
Coriander - aromatic and fresh coriander not only tastes so great but lends texture, colour and flavours and make this salsa so vibrant. 
Seasoning - salt and freshly ground pepper do all the tricks. 


HOW TO MAKE TROPICAL MANGO & PASSION FRUIT SALSA



This recipe is quick and easy, comes together in a whizz. Just peel the fruit, chop them into dice and toss all the ingredients in a bowl and serve at room temperature. 

You can customise the recipe to your personal preference, add another tropical fruit or omit one. Add more or decrease jalapeno quantity according to your heat tolerance. Also, feel free to adjust lime and seasoning to taste. 


SERVING SUGGESTIONS



Serve this tongue tickling salsa as a side dish to any of your favourite Mexican dish, or as a starter with tortilla chips or just enjoy on it's own as a healthy snack. If you are hosting a bbq or any party you may serve this salsa in a pineapple bowl. 


HOW TO MAKE PINEAPPLE BOWL OR BOAT?



You will need ripe but firm fresh pineapple. 
With the sharp knife cut about 1/3 of the pineapple in a horizontal line. 
Use a metal spoon to scoop out pineapple flash. ( Use the flash in the salsa)
Serve salsa in the pineapple bowl or boat. 


CAN BE SALSA MADE IN ADVANCE?



I prefer making it fresh on the day, but if you are planning to make a big batch or party you can make a day before, without adding avocado. Keep it in a clean bowl, cover tightly with the cling film and store in a refrigerator. Bring out the salsa at least half an hour before serving.

  • 1 cup peeled and diced Alphonso mango
  • 3/4 cup peeled and diced pineapple
  • 3 passion fruit pulp
  • 1 big avocado peeled and diced
  • 1 small red onion peeled and diced
  • 2 TBSP roughly chopped jalapeno 
  • 1 lime juice
  • 3 TBSP freshly chopped coriander 
  • Salt and black pepper
