RED CABBAGE APPLE SAMBHARO (STIR-FRY)

Red Cabbage Apple Sambharo – a healthy and vegan warm salad recipe of sauteed autumn produces red cabbage and apple with Indian spices such as green chilies and mustard seeds, perfect as a side dish. 

Got hold of this bright red and crunchy cabbage from my recent trip to PYO farm. Red cabbage is Brit’s one of winter favourite vegetable.

Amazingly versatile, colourful. Looks beautiful on the plate and palate. I’ve been using red cabbage for a long time. I use it in a salad, make slaw and Sambharo too.

What is Gujarati Sambharo? 

Sambharo is a traditional spicy warm salad that is often served as a side dish to the main Gujarati meal or farsan (spicy snacks) such as Fafda and Jalebi.

It is usually prepared with hard vegetables such as cabbage, carrots or raw papaya and cooked with hot green chillies with minimal spices, sometimes green capsicum or raw mangoes are added too.

It is similar to Chinese stir-fry recipes where the vegetables are lightly stir-fried on high heat to keep their crunch intact.

In our family, sambharo is made and served whenever there is any bean curry is made like Lasanwala Mung or Rajma Masala.

Gujarati Red Cabbage Apple Sambharo

Apples and cabbage are natural partners. In this recipe both ingredients are present but with a twist, I have given Indian flavour by adding green chillies and mustard seeds and they mingle perfectly  !!

If you can’t get hold of red cabbage and still want to try out sambharo recipe try
Raw Papaya, Cabbage and Carrot sambharo,
Beetroot, Carrot, White radish and Mixed seeds sambharo or
Carrot Sambharo .

RED CABBAGE APPLE SAMBHARO (STIR-FRY)

Quick and Easy Red Cabbage and Apple stir fry with Indian flavours!

ingredients:

  • 1 cup red cabbage shredded
  • 1 small cooking apple shredded
  • 2-3 green chillies slit into two
  • 1 tbsp. oil
  • 1 tsp. mustard seeds
  • 1/2 tsp. fenugreek seeds – optional
  • salt to taste
  • Pinch regular sugar
  • 1/2 tsp. lemon juice

instructions:

How to cook RED CABBAGE APPLE SAMBHARO (STIR-FRY)

  1. Make sure there is no water in the cabbage.
  2. It should be dry with a kitchen towel.
  3. Heat oil in a nonstick pan on high heat, add mustard seeds.
  4. Once they crackle add fenugreek seeds.
  5. After 8-10 seconds add green chillies.
  6. Fry green chillies for 10 seconds and add cabbage and apple.
  7. Turn the heat high and add salt and sugar.
  8. Cook the sambharo just for 2 minutes.
  9. Turn of the heat, add lemon juice.
  10. Mix well.

NOTES:

Make sure you have all the ingredients ready with you as this dish should be cooked on high heat, yet should not be burnt.
Keep high heat all the time.
