Extremely moreish Date and Pistachio rolls are made in the microwave with only 2 main ingredients. Also known as Khajur Barfi or Khajur Dry Fruit Barfi in India, these sweet treats are packed with energy and essential minerals.

Indian style Date and Pistachio Rolls Microwave Method
These date rolls are the same home-style rolls that you probably grew up with your Mum making. At home, we would call them "Khajur Paak" in Gujarati.
These are Indian style because they use ghee and you can incorporate some Indian flavours to them.
For ease, we make our khajur barfi in the microwave but we have included a stovetop method below also.
These rolls are eggless as the sticky dates are enough to bind all of the ingredients.

You can make these date rolls for a number of occasions throughout the year. The gorgeous colouring of these makes them a showstopper sweet.
They are also packed with opulent ingredients so they are worth serving during festivities.
Saying that my Mum would make me these during the weekend so that I could pack a few in my lunchbox for break time at school. As they are packed with iron and sugar, they gave me the boost I needed to concentrate throughout the day. (the other kids came in with chocolate bars and sweets ... )
Therefore, make these rolls for the following:
Great for snacking throughout the day - in other words, just make them whenever!
You can make these for Christmas, Thanksgiving or Easter.
You can make these during many Indian festivals such as Diwali, Holi, Makar Sankranti
You could make these during Ramadan and Eid. The high calory content makes these great, especially for this occasion.
Which dates can I use for Date and Nut Rolls?
If you've ever visited countries, especially in the middle east, then you'll realise just how many types of dates there are!!
We have used medjool dates for this recipe. They are very plump and sweet and due to their softness, they are easier to handle.
However, you can use other dates to suit your preference or whatever you have at home.

These rolls already have a wonderful flavour from the dates and nuts, however, it is possible to layer in further flavours.
You can add cardamom powder for a subtle floral aroma
Add some cinnamon powder
Add some ginger powder
You may add vanilla bean paste or a few drops of rose essence

How long do Date Rolls last?
In my experience, these date rolls will last for well over a month. We have technically not added any moisture to the recipe so there is no reason for them to spoil.
All ingredients added are those that keep well in the cupboard for many months.
However, you will notice that over time, they become harder and may taste stale. I would recommend consuming them within a month.
Keep stored in an airtight container so that they retain their softness for as long as possible.
How to make Date and Pistachio Rolls in the microwave - step by step

DATE AND PISTACHIO ROLLS | KHAJUR BARFI IN MICROWAVE
Ingredients
Instructions
- Place pitted dates and ghee in a microwave-proof bowl and cook for 3-4 minutes on HIGH or until softens.
- Then, mash the dates with a potato masher until no lumps left.
- Add pistachio and combine well. Add cardamom or rose extract at this stage if using.
- Let the mixture cool until it can be handled with bare hands.
- Lay a parchment paper, sprinkle coconut and date mixture, knead the mixture as smooth as possible, you may add 1/2 tsp ghee or coconut oil at this stage.
- Roll out into long narrow cylinder shapes, let it completely cool at room temperature then wrap it in cling film or new parchment paper and let it chill in the refrigerator at least 1 hour.
- Remove the cling film, roll the log in the desiccated coconut, then cut into small rolls using a sharp knife.
- Store in an airtight container.
Notes:
I have used dried rose petals and buds only for decoration and photographic purpose.
To make these rolls vegan use coconut oil or any vegan butter.
