Waffle Idli Delight

Waffle Idli Delight, a delicious, fluffy and crispy waffle prepared with traditional Idli batter and served with mildly spiced potato filling and green chutney.
ingredients:
For the waffles
500 g Idli Batter
3-4 tsp. oil
Few tbsp. Green Chutney
Freshly chopped coriander ( optional )
For the potato filling
3-4 boiled, peeled and roughly mashed medium potatoes
½ finely chopped onion
1 sprig curry leaves ( Kari Patta)
1 tbsp. oil
½ tsp. turmeric powder
Salt to taste
½ tsp. mustard seeds
Pinch asafoetida ( hing )
instructions:
In a pan or kadai heat the oil and add mustard seeds and hing.
Once it crackles add onion and curry leaves.
Cook the onion for a couple of minutes then add turmeric powder.
Now add mashed potato and salt.
Cook this mixture for a couple of minutes and turn the heat off.
Leave it aside for later use.
Make Idli waffles
Heat your waffle machine according to its manual.
With a pastry or basting brush apply little oil on both waffles plate.
Pour the idli batter into the waffle plates.
Let the waffles cook for at least 4-5 minutes or until nicely golden.
Remove it from the waffle maker.
Serve hot with potato filling and green chutney.
Garnish the waffles with freshly chopped coriander.
For a variation, you can use garlic and red chilli chutney or coconut chutney.

NOTES:
For a satvik version omit the onion. Keep Idli batter at room temperature before cooking the waffles.
