Sometimes you just crave sticky, fudgy brownies straight from the oven. Luckily, these egg-free Coca-Cola Brownies come together in less than 40 minutes. The star ingredient in this recipe is regular Coca-Cola which creates the lightest crust with a melt-in-the-mouth moist centre.

The classic chocolate brownies were amongst the first things we learnt to make at school. I distinctly remember me and my food tech partner sharing our ingredients, learning to bake all kinds of sweet treats.
Now as a home baker, I’ve taken that foundation and made it my thing. Every bake on JCO is completely eggless, and I’m always working on getting the texture just right without compromise.
These cola brownies are a complete game changer! I made these for friends and no one could believe they were eggless! They kept asking what my secret was!
The cola works as substitute for eggs and oil in the brownie. The result is the characteristic desirable fudgy centre with a thin crust on top.
So gooey and moist - even my Mum who doesn't really like chocolate baked goods fell in love!
I like to let the chocolate flavour shine and have these with a strong cup of coffee or a karak tea.

Coca Cola Brownies
Ingredients
- 80-100 millilitres Coca-Cola regular/full sugar
- 100 grams plain flour sifted
- 100 grams dark chocolate
- 200 grams condensed milk
- 45 grams butter
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon vanilla extract
- 40 grams chopped walnuts optional
Instructions
- Preheat the oven to 180°C and line a baking tray with parchment paper.
- In a bowl, whisk together the sifted 100 grams plain flour, 1 teaspoon baking soda and ½ teaspoon baking powder.
- Melt 100 grams dark chocolate and 45 grams butter together using a bain-marie method until smooth.
- To the dry ingredients, add 200 grams condensed milk, ¼ teaspoon vanilla extract and the melted chocolate mixture, stirring until just incorporated.
- Pour in 80-100 millilitres Coca-Cola and mix gently to form a smooth batter. Fold in 40 grams chopped walnuts, if using.
- Transfer the batter to the prepared baking tray and spread evenly.
- Bake for 22–25 minutes, or until a skewer inserted comes out with a few moist crumbs.
- Allow to cool slightly before slicing and serving.
