FRESAS CON CREMA


So light and refreshing, Fresas Con Crema is the ultimate dessert for hot summer days. Made with just 5 simple and easy to find ingredients, you can have a decadent dessert on the table within minutes. 

I love having handy recipes as these which require minimal effort and minimal preparation. 

Our Homemade Instant Shrikhand with Cream is one such dessert that is ready within minutes yet is one of the most satisfying. 

Also, I adore  My Grandma's Shakkar Teti Panna (cantaloupe melon in sweetened milk), every summer I look forward to it because it is so refreshing, light and easy to make. 


British Strawberries and Cream

As a Brit, I know a thing or two about strawberries and cream! One of my favourite after-dinner sweets has always been strawberries and cream with a sprinkle of sugar. 

We love celebrating British strawberries during Strawberry season here in the UK. Strawberry season ranges from around May until July however this ranges from farm to farm and year to year depending on the conditions. 

The best examples of celebrating British strawberries is the most popular strawberries and cream at the Wimbledon tournament!

Strawberries are available in the UK throughout the year however strawberries that are out of season are usually imported from abroad. 

These imported strawberries never seem to have the same sweetness as the British strawberries but there is a reason for this. 

Imported strawberries have to be picked before they are fully ripe or else they will mush during transportation. Strawberries do not ripen after they are picked meaning that during the off-season we will only get strawberries that are hard and often lacking in flavour. 

However, during the British strawberry season, these strawberries can be picked at the perfect time. 

At home, we aim to make the most of produce during its season so that we can enjoy that product at its finest. 

For example, during Jersey Royals season, we often make potato salads, dum aloo and Jersey Royal Potato Butter Masala

During Winter, we indulge in seasonal soups such as our Best Butternut Squash and Cannellini Bean Soup 

Indian Mango season is a much-awaited time in our household and you will find mango incorporated into our meals during breakfast, lunch and dinner! 

Gujarati Mango Kadhi is a wonderful dinner time favourite. Gelatine free Layered Mango Panna Cotta is a great showstopper dessert.

What is Fresas Con Crema

Back to our main subject! Fresas Con Crema is a Mexican no-bake dessert that is often served on Mexico roadside on fruit stalls. 

The dessert consists of fresh strawberries mixed in a sweetened cream that consists of cream, condensed milk, evaporated milk and either sour cream or creme fraiche. 

The end result is a delicately sweet cream that is pourable. As the strawberries are mixed in with the cream, it also flavours the cream slightly with strawberries. 

Another Mexican desserts that we love are our Eggless Strawberry Tres Leches Cake, which is a three milk cake made with double cream, condensed milk and evaporated milk. 

In the summer, we love to drink Mexican Saffron and Cardamom Horchata - a rice-based drink flavoured with Indian saffron and cardamom. 

Our Espresso Black Bean Tacos would make a brilliant main for a Mexican feast!


Ingredients for Fresas Con Crema

Exact measurements and method in the recipe card below. 

● Strawberries

Use the freshest strawberries to enjoy this dessert at its best. Strawberries are highly perishable so are best bought and eaten within 24 hours. 

For this recipe, I would recommend doing just that. 

We have not bought organic strawberries so wash ours before serving. If you do not want the strawberries to absorb excess moisture (which they do when washing) then seek organic strawberries. 

Sweetened Cream

● Double cream - use fresh double cream. Single cream is also fine but will make a slightly thinner cream mixture. Readers from the USA use heavy cream. 

● Evaporated Milk - we have used tinned evaporated milk. If can't find it use whole milk or half and half. 

● Condensed Milk - known as la lachera or milkmaid. You can adjust the amount of condensed milk you add to adjust the sweetness to your liking and the sweetness of the batch of strawberries you are using. 

● Sour cream

To make Fresas Con Crema without Sour Cream, you can use creme fraiche. Another option is to use greek yogurt. 

You can optionally add a little drop of vanilla to the cream but we have not added it here.

You can use this cream with other fruit as well depending on what you have around.

Vegan Fresas Con Crema

To make Strawberries and Cream vegan friendly, we need to find some vegan substitutes for the cream. 

Vegan condensed milk is now easily available in British supermarkets. Vegan Condensed milk also has sugar meaning you will not need to add your own. 

Vegan cream alternatives are also available. These plant-based creams pour, cooks and whips just like cream. 

Whisk both vegan condensed milk and vegan cream together to make the sweetened cream for this recipe. 

Ensure that the white sugar you use is vegan. 

Serving suggestions

In hot summer I would have this as a breakfast or as a mid-morning snack.

Or it can be served after heavy lunch or dinner as a light, refreshing no-cook dessert.

Great for alfresco dining or garden parties. 


Storage

I would buy the strawberries up to a day in advance 

You can make the cream ahead of time and mix the strawberries and cream when ready to serve

Do not store the strawberries and cream mixed together for long or else the cream may split. 

How to make Fresas Con Crema

1. Slice the strawberries into your desired shape. 

We have used a mandolin for even thickness sliced strawberries

2. Add some sugar to the strawberries (optional)

3. In another bowl take double or heavy cream.

4. Then add sour cream.

5. Evaporated milk.

6. Add condensed milk.

7. Whisk together the sour cream or creme fraiche, evaporated milk, condensed milk and double cream until well incorporated.

The cream will thicken slightly as you whisk but will mostly remain a pourable consistency.

8. Assemble by adding strawberries to your preferred container and top with cream.

Or mix into a large bowl and let everyone help themselves!

Serve immediately

Ingredients

Strawberries
  • 500g strawberries ripen 
  • 1 tsp. sugar (optional)
Sweetened Cream
  • 1 cup sour cream (250ml)
  • 1/2 cup condensed milk (125ml)
  • 1/4 cup evaporated milk (60ml)
  • 1/2 cup double cream (heavy cream) 125ml
Equipments/Tools
  • Mandoline or
  • Sharp knife
  • Chopping board
  • Bowl
  • Whisk
  • Big spoon

Instructions

  1. Wash the strawberries under the running water.
  2. Pat dry, remove the stems from the strawberries.
  3. Slice it using a mandoline or sharp knife into rounds or whatever shape you like.
  4. Add sugar, mix and leave it aside for 5 minutes.
  5. Meanwhile, in a large mixing bowl add all the sweetened cream ingredients and whisk together to combine.
  6. Add equal amounts of berries into a glass, bowl or jar and top it up with the cream. 
  7. Serve immediately.  

Notes:

Make sure all the cream and milk are chilled enough.

You may add vanilla extract if you like.

  2. With a strong Brit influence in Kenya, I've grown up enjoy the classic strawberries and cream. Fresas Con Crema is a dessert I had the opportunity to enjoy at an authentic (not Tex Mex) restaurant in Montreal and can vouch its the yummiest. So creamy and different. Would make a great summer party dessert.
