INDIANS AND CHAAT


India is famous around the world for its Masala Chai and Street food in the culinary world and among the street foods...the CHAAT rules. Indians are crazy for chaat and it is immensely enjoyed by people from all walks of life. No matter what your status, class or creed the famous chaat is always enjoyed at the roadside stalls.

These irresistible and lip-smacking chaats not ONLY huge amongst the Indians but have charmed global citizens too. Chaat can be best described as a savoury snack and believed to originate from Uttar Pradesh, North India. Basically, it's the fast food equivalent to getting fish & chips.

We too Love chaat and can't resist preparing various chaat recipes at home such as Bhel Puri, Paani Puri, Potato hash brown and pineapple chaat and Papdi Chaat.

There are numerous amount of popular Indian chaat recipes out there, one of them is Papdi Chaat.

WHAT IS PAPDI CHAAT?


In Hindi, Papdi translates thin flat wafers and Chaat means 'to lick', no wonder me and mum always end up licking our plates! It comprises of crispy and crunchy papdi ( deep fried thin wheat flour wafers) boiled potatoes and chickpeas, variety of sweet, spicy and tangy sauces and chilled yogurt. Papdi chaat is pretty much like Mexican Nachos where crispy and crunchy papdis are buried under fluffy boiled potatoes, tender chickpeas, chilled and sweetened yogurt, bright mint-coriander chutney, sweet and sour tamarind chutney, nylon sev (very thin gram flour noodles) and dusted with a generous amount of Chaat Masala.

INGREDIENTS FOR PAPDI CHAAT



The full of flavour Papdi chaat, requires an array of Ingredients and list might look daunting but once you get hold of it from the near Indian store it is so easy and quick to assemble.

Papdi - wheat flour crispies or wafers, These papdis can be prepared at home or readymade. If you are watching your diet make baked papdi at home.

Boiled Chickpeas and potatoes - One can use canned chickpeas too.

Sev - gram flour noodles, although best to use nylon sev which is very thin noodles but if you can't find use medium size or one can use Bombay mix too.

Chutneys or sauces - Chutneys are the backbone of any chaat and can not do without Imli-Tamarind Chutney and Coriander and Mint Chutney.

Yogurt - lightly sweetened, mild and chilled yogurts make all the difference to this dish, vegans can use vegan yogurt or can skip totally.

Garnishes such as finely chopped red onion, tomato, freshly chopped coriander, pomegranate arils, and last but not least CHAAT MASALA.

HOW TO MAKE PAPDI CHAAT?


The hardest part you have done already, you have gathered all the ingredients, assembling the papdi chaat is child's play, yes you can involve your little chef in this game too. Now once you start assembling the papdi chaat, you don't have to think of what goes in order, just dump a small amount of all the ingredients on a serving plate, and start munching but hey if you are a perfectionist and want present your dish with a WOW factor look at the pictures below.

On a serving plate first, arrange some papdis.


Then layer with boiled potato cubes, boiled chickpeas and sprinkle chaat masala.



Pour a couple of spoons yogurt.


Add green and tamarind chutney, onion and tomato.


Top the chaat with sev, chaat masala, pomegranate arils, chaat masala and finely chopped coriander. Enjoy! 


CAN I PREPARE PAPDI CHAAT IN ADVANCE?

Papdi chaat cannot be assembled in advance but of course, you can prepare all the ingredients in advance ready to use later on. Papdi and sev can be prepared or bought even a week before. Both the chutneys and potatoes can be made a day before and kept in the refrigerator. 

SERVING PAPDI CHAAT

Papdi chaat is a great tea time snack or a great alternative meal. This chaat can be served as a starter of an Indian meal, or as a potluck party item at the kitty party. This papdi chaat can be eaten on a SHEETLA SATAM day as a part of the cold food menu.

This Papdi chaat is crunchy, spicy, tangy and sweet snacks and can be eaten as an evening snack or as a great alternative to a meal.

ingredients:

  • 500g papdi
  • 250g nylon sev
  • 4 boiled potato (cubed)
  • 250g boiled chickpeas
  • 250ml plain mild full-fat yogurt
  • 2 TBSP sugar
  • 1 medium red onion finely chopped.
  • 1 medium tomato finely chopped
  • 1 cup tamarind chutney
  • 1/2 cup coriander and mint chutney
  • Chaat masala
  • 1 cup finely chopped fresh coriander
  • 1/2 cup pomegranate arils  

instructions:

How to cook Ultimate Papdi Chaat

  1. Add sugar in yogurt and mix it well.
  2. On a four serving plate arrange papdi, potato and chickpeas.
  3. Sprinkle some chaat masala.
  4. Pour yogurt and both the chutneys.
  5. Top the chaat with onion, tomato, sev, coriander, and pomegranate arils.
  6. Sprinkle some chaat masala, if you want pour more chutneys.
  7. Serve immediately.
  8. Enjoy! 

NOTES:

You can use black chickpeas instead of white chickpeas.
