So today we’ve got one of those indulgent recipes. I clearly remember the days we had Butterscotch Tart for school dinner, the word would spread all the way down the queue that our pudding today was Butterscotch Tart. Never had school kids been so excited to eat school dinners.

Butterscotch tart is a classic, nostalgic dessert. It comprises a shortcrust pastry topped with "butterscotch". The butterscotch is a very sweet filling made with milk, brown sugar, butter and flour and tastes a bit like caramel, although the texture is a little different.  In my opinion, butterscotch tart isn't complete without chocolate 100s and 1000s.

Even my Dad every couple of months will mention butterscotch tart. We were sad to think that we might never be able savour that taste ever again. Until today.

This silky butterscotch tart melts in your mouth. Even after years passed by, when I close my eyes, I can still taste the incredible buttery sweetness of this dessert.

INGREDIENTS REQUIRED FOR BUTTERSCOTCH TART

For the eggless shortcrust pastry, you will need plain flour, caster sugar, softened butter, a pinch of salt and water

For the butterscotch filling, you will need demerara sugar, milk, butter and plain flour.

Top with chocolate hundreds and thousands to make it authentic.

METHOD TO MAKE SCHOOL DINNER STYLE BUTTERSCOTCH TART

To make the eggless shortcrust pastry – sift plain flour, caster sugar and salt together. Add the butter and form a dough. Roll out the pasty, transfer to desired bakeware and bake blind.

Meanwhile, to make the butterscotch filling – melt butter in a pan and add the demerara sugar, Mix until it dissolves. Add the milk and flour and whisk quickly to prevent any lumps. Pour into the pastry case. Allow to cool then refrigerate.

The risk of being the kind of cook that never measures any ingredients when cooking, is that this habit can easily spill over when baking. This can be a dangerous affair as baking requires precision. I haven’t baked enough in my time to know how much to add – something my mum is a lot better at! So until I acquire that skill, I’ve got electric kitchen scales on my side!

I love the stainless steel finish, the scale looks really modern on the kitchen counter. The stainless steel also allows for durability. In case you do want to use a different bowl, you still can as the bowl provided is detachable.

The scale shuts off automatically within 2 minutes so does not waste batteries.

Ingredients
 
 

  • 177 g sifted plain flour
  • 142 g chilled butter
  • 1 TBSP caster sugar
  • Pinch of sugar
  • Cold water
  • 170 g butter
  • 170 g soft brown sugar
  • 100 ml whole milk
  • 35 g plain flour
  • 1 TBSP milk chocolate sprinkles

Instructions
 

  • Preheat oven to gas mark 6, 200C or 400F.
  • In a bowl add plain flour, salt, and sugar. Mix well.
  • Add chilled cubed butter and rub with your fingertips until you have fine breadcrumbs mixture.
  • Add chilled water little by little and form a firm dough without working too much.
  • Roll the pastry to fit an 8"x8" pie dish.
  • Trim the edges then prick the base with the clean toothpick.
  • Line with the baking paper and fill with the baking beans or any regular beans such as red kidney or risotto rice.
  • Blind bake in the preheated oven for 15 minutes, then remove the paper and bake another 8-10 minutes or until lightly golden brown.
  • Leave it to completely cool on a wire rack while you prepare the butterscotch filling. 
  • In a pan add butter and let it melt on low heat.
  • Add sugar and gently whisk it and let the sugar melt.
  • Add milk and bring it to a gentle boil, keep mix it.
  • Now add sifted plain flour and keep the heat very low.
  • Keep mixing using egg whisker and make sure there are no lumps formed.
  • Cook the mixture for 3-4 minutes. once the mixture comes to a pancake consistency turn off the heat.
  • Pour the mixture into the baked pastry case and let it cool at the room temperature. 
  • Once it cooled leave it in the refrigerator to set completely.  
  • Sprinkle 100 & 1000 chocolate sprinkles.
  • It may take up to 3-4 hours to set, once set cut it into slices.
  • Serve on its own or with cream or custard.
  • Enjoy!

Notes

To save the time buy a readymade pastry case and make filling at home.

I cannot imagine my kitchen without a scale. Its an important part of equipment required especially when one enjoys baking. I've not tasted a butterscotch tart. Yours looks super tempting and would love to try it.
