A classic comfort food loved by everyone all over the world, this rice pudding is made with a little twist. This pudding is made with coconut milk and served with fresh fruit salad and takes less than 30 minutes to make. It is sweet, creamy and aromatic and a great dessert to make for a summer party, Mother's day, Ramadan or as a comforting snack.

I am sure, now and then we all crave for something sweet and can't resist making our favourite dessert. I and my family have a soft spot for rice pudding, obviously Indian flavoured, KHEER which we enjoy with Poori (deep fried Indian flatbread) and Aloo Matar. It's sweet, creamy and loaded with flavours and rich nuts. Recently, there was an occasion in the family and was required to make kheer, but I whipped up this vegan and lighter version of fruity coconut rice pudding as one of the guests we invited is vegan. I so loved this rice pudding and decided to give this recipe a proper place on this blog.

WHAT DOES THIS FRUITY COCONUT RICE PUDDING TASTE LIKE?


Delightful, delicious, rich and creamy, these words I can think of right now, you may add more once you try it :) Although it is rich and creamy no way heavy on the tummy.  Coconut milk imparts the most delicious flavour to this simple rice pudding, cardamom and zest of orange lends subtle fragrance and summer berries add a wonderful contrast. Rice is well cooked and simmered in coconut milk, so there is no watery consistency but it is super creamy.

INGREDIENTS FOR FRUITY COCONUT RICE PUDDING


Rice - I used basmati rice for this recipe but you can use Jasmine, arborio, pudding or brown rice, all work so well with coconut milk.

Coconut milk - Full fat or light coconut milk both work well.

Coconut cream - this is optional.

Sugar - To sweeten up this pudding I have used regular vegan granulated sugar, for a refined sugar-free recipe you can use maple syrup, agave syrup, coconut nectar or brown rice syrup. If not vegan, use honey. All of these options will work well for this recipe too.

Spices -  The aromatic flavour of cardamom always wins in any dessert recipe, it's subtle and warm without overpowering. You can use cinnamon or nutmeg.

Citrus- A tsp of orange zest goes well with this vegan rice pudding, nice and bright and a little ray of sunshine in a bowl.

Berries - Now that summer is on our doorstep and these juicy and fresh strawberries and blueberries are making their way to the market, why not to top it up this plain white rice pudding and make it so colourful.

Coconut - I have used very lightly toasted coconut to garnish it, but you can toast it darker or totally leave it.

Nuts - A few toasted almond slivers or any other nuts will work well or you can avoid it totally.


HOW TO MAKE BEST FRUITY COCONUT RICE PUDDING ON THE HOB OR STOVE?


The first thing you want to do is wash your rice and leave it for 5 to 10 minutes on a worktop.
Next is take a heavy bottom pan or kadai (I always use a heavy bottom pan for my milk-based recipes)
Pour coconut milk in a pan, bring it to boil on medium heat.
Add crushed cardamom and washed rice. mix well.
Let it boil for 5-7 minutes uncovered, then lowered down the heat and let it simmer for 18-20 minutes. Keep checking and stirring every few minutes so it doesn't stick to the pan.
 Add sugar or whichever sweetener you are using, along with orange zest and some toasted coconut.
Mix well, cook another 5-7 minutes, at this time do not cook rice pudding covered and stir almost constantly. 
Now add coconut cream, if using then turn off the heat.
Let the pudding sit for a while, at this stage, it will go very creamy.
If you want to serve warm, serve after five to ten minutes, top it up with the berries, nuts and remaining toasted coconut.


HOW TO MAKE FRUITY COCONUT RICE PUDDING IN THE ELECTRIC PRESSURE COOKER?


A pressure cooker makes homemade fruity coconut rice pudding easier than ever, you may have an Instant Pot, Cosori or Pressure King Pro, all will work for this recipe. It's so simple, just dump everything in, set it and forget until you hear or smell the delicious aroma of this dish.

Place coconut milk, rice, sugar and cardamom in the inner pot, give it a good stir.
Seal the cooker with the lid and turn the vent on sealing.
Set the manual high pressure for 12-15 minutes.
Let the pressure release naturally for 10 minutes then quick release the pressure manually.
If it is too thick add some coconut or any other plant milk and coconut cream.
Open the lid, stir and add orange zest and toasted coconut.
Serve in a serving bowl, add berries and almonds and enjoy warm or cold.

RICE PUDDING TOPPING VARIATIONS


There are so many rice pudding options you can choose from, from aromatic spices to seasonable fruits.

Cinnamon powder
Toasted nuts
Toasted coconut chips
Hemp seeds
Raisins
Fresh fruits to dried fruits
For the Carribean, twist add caramelised pineapple, apple, mango or banana. Keep rice pudding chilled for this variation.

I find full fat coconut milk best for this creamy rice pudding.

Can I use cooked rice for coconut rice pudding?
Yes, as long as the rice hasn't been cooked for more than a day

Can I make ahead of this rice pudding for the dinner party?
Definitely yes.

How long will homemade fruity coconut rice pudding keep?

Rice pudding can be kept well in the fridge for up to 3 days in an airtight container. You may want to add a little coconut or any other milk to when reheating if pudding has firmed up in the refrigerator.

Can rice pudding be frozen?
Yes, place the rice pudding in a freezer safe container and seal tightly. It can be frozen up to three months but sooner you eat, the better it will taste.

This creamy and delicious fruity coconut rice pudding is so easy to whip up and can be done in less than 30 minutes.

ingredients:

  • 1 can full fat coconut milk
  • 3 TBSP coconut cream - optional
  • 1/2 cup rice
  • 1/3 cup sugar
  • 2 TBSP lightly toasted coconut flakes
  • 2 cardamom pods crushed
  • 1 TSP orange zest
  • 1 cup fresh strawberries and blueberries
  • 1 TBSP almond slivers

How to cook Fruity Coconut Rice Pudding

  1. First Wash rice and leave it aside for 5-7 minutes.
  2. In a heavy bottom, pan add milk and bring it to boil.
  3. Add rice and cardamom pods and mix well.
  4. Bring it to boil and let it cook for 5 minutes then lower the heat and let it simmer for 15-20 minutes. 
  5. Add sugar, orange zest and 1 TBSP toasted coconut.
  6. Mix well and let it cook for another 5 minutes.
  7. Once done, turn off the heat and let it sit for a while.
  8. Serve in a serving bowl, top it up with berries and almond.
  9. Enjoy!

  13. This is truly a classic dessert. Reminds me of the desserts we used to have at school. Brings back so many great memories. I haven't had rice pudding with coconut milk but I love coconut so I believe I'd like it even more than regular rice pudding. Can't wait to make this.
