It can be served as breakfast, brunch or prepare for kids parties rather than deep-fried foods, low in fat and still tastes delicious!

Recently Renu has launched her new recipe book 'Modern Vegetarian Recipes' to tickle your palate. I am the lucky one to review her book, what a beautiful book it is, you can feel and sense that through this book Tarlaji's presence is still there. The paperback cover with a glossy cover page, beautiful images with a good amount of recipes are just all irresistible. This book is full of inventive cuisines yet are simple and fusion recipes.


Along with all the innovative, modern and fusion recipes, there are some basic recipes and tips too. There are many recipes for beginners as well as some challenging ones for those who are feeling adventurous in the kitchen. I thoroughly enjoyed going through all the recipes in the book and really I was eager to make these ASAP in my kitchen.  Since all the recipes were too good, we were spoilt for choice but waffle idli delight caught my attention as we love south Indian dishes, both children were at home and this was an excuse to use my new waffle maker which my children got me as a Mother's day gift.

Here is the Waffle Idli Delight recipe from Renu's book 'Modern Vegetarian Recipes'. I made no changes to the recipe. It turned out so well and thoroughly enjoyed as lunch over the weekend.

Waffle Idli Delight

prep time: 20 minscook time: 10 minstotal time: 30 mins
Waffle Idli Delight, a delicious, fluffy and crispy waffle prepared with traditional Idli batter and served with mildly spiced potato filling and green chutney.

ingredients:

For the waffles


500 g Idli Batter
3-4 tsp. oil
Few tbsp. Green Chutney
Freshly  chopped coriander ( optional )

For the potato filling

3-4 boiled, peeled and roughly mashed medium potatoes
1/2 finely chopped onion 
1 sprig curry leaves ( Kari Patta)
1 tbsp. oil
1/2 tsp. turmeric powder
Salt to taste
1/2 tsp. mustard seeds
Pinch asafoetida ( hing )

instructions:

In a pan or kadai heat the oil and add mustard seeds and hing.
Once it crackles add onion and curry leaves.
Cook the onion for a couple of minutes then add turmeric powder.
Now add mashed potato and salt.
Cook this mixture for a couple of minutes and turn the heat off.
Leave it aside for later use.

Make Idli waffles
Heat your waffle machine according to its manual. 
With a pastry or basting brush apply little oil on both waffles plate.
Pour the idli batter into the waffle plates. 
Let the waffles cook for at least 4-5 minutes or until nicely golden. 
Remove it from the waffle maker.
Serve hot with potato filling and green chutney.
Garnish the waffles with freshly chopped coriander. 
For a variation, you can use garlic and red chilli chutney or coconut chutney. 
Enjoy! 

NOTES:

For a satvik version omit the onion. 
Keep Idli batter at room temperature before cooking the waffles.

    1. These were the ideas dancing in my head while I saw the recipe, but since it's Renu's recipe I didn't want to change anything, but yes you can do so much more with this recipe.
