Kenyan style Masala Chips have a Gujarati style flavour with lemon juice and a little sugar added to it. These are Indian style fries enjoyed by people in India. 

To make this recipe quick and simpler we are using frozen chunky chips that can easily be baked in the oven or air fryer. The best part of this masala fries recipe is that you do not have to prepare the chips from scratch. 

However, if you have time on your hands why not make these chips recipe from scratch!

The best part of this masala fries recipe is that we are using air fried potato chips for this recipe and not deep-fried chips or fries.

✔ This is a partly make-ahead recipe, as you can precook the masala and when you are ready add air fryer chips, mix and enjoy. 


● Readymade frozen chips/fries - oven chunky chips or chunky fries or any frozen oven chips work fine. This time we have used chunky crinkle cut chips. 

Our favourite brand is McCain Chips, however, you can get supermarket's own chips too. If can't find frozen chips, you can make homemade chunky chips from scratch. 

● Onion - for Indian style masalawala chips onion is must, we have used white onion finely chopped, or white diced onion too. You may use red onion, however, the masala will turn little darker. 

● Freshly minced ginger-garlic - for best flavours and results. You may use store-bought ginger-garlic puree too. 

● Passata Sauce also known as Italian sieved tomato puree. It is silky smooth and a dark red colour made using ripe tomatoes. You may use tomato puree or crushed fresh tomato. 

If using fresh crushed tomatoes, add some tomato ketchup, chilli sauce, tabasco sauce or even sweet chilli sauce. 

● Indian spice powders - to make Indian flavoured chips we only need four basic spice powders like red chilli powder, cumin powder, coriander powder and garam masala. 

● Chaat masala for tangy flavours, easily available from South Asian grocery stores. If you can't find, use extra lemon juice. 

● Oil - we have used light olive oil but you can use any other oil, however, try to avoid strong flavored oil such as Mustard and sesame. 

● Lemon or lime juice 

● Coriander/Cilantro leaves - use fresh finely chopped leaves, and use lots of it. Do not skip, they not only add texture and flavours to this recipe but they add freshness to the chips. 


If using frozen readymade chips or fries to add to the Indian masala make sure you get chunky types and not the skinny french fries as we don't want fries to break up in the masala.

Do not air fry or oven bake chips in advance and masala later, fries lose their crunchiness after 15-20 minutes. So you can make masala first and store in the fridge. (this is a make ahead recipe)

To save your precious time prepare and work on the masala for chips whilst still cooking chips in air fryer or in the oven. 

Once chips are cooked/baked/air-fried add straightaway in the masala, and gently but properly mix using a wooden spoon so all that fries get coated evenly with all the Indian spices. 

Do not let sit masala fries for more than 2 minutes in the pan once added and mixed, serve immedietly as they lose their crunchiness very quickly. 

For maximum flavours and zing or chatpata flavoured masala fries do not skip chaat masala and lemon juice. Only sprinkle chat masala in the last stage. 


Masala chips are best served hot with tangy green mint and coriander chutney however they are just tasty as they are too. 

These masalawala chips are so tasty, and wonderfully go so well with caribbean inspired mango, coconut and passion fruit lassi  or chilled and refreshing virgin cardamom mojito or even any bottle or can of soda. 


How to air fry chips for masala chips? 

To make the best air fryer masala chips, first preheat the air fryer 195⁰ C or 383⁰ F for 4 minutes. Then place frozen chunkey chips and air fry for 12-14 minutes, keep an eye on them after 10 minutes. Also shake in between around at 6-7 minutes. 

What to put in masala fries?

The best part about this masala chips recipe is that you can experiment or adjust flavours according to your palate. If you like very hot and spicy food, increase the red chilli and garam masala powder quanitity.

Whilst chips are cooking in the air fryer let's cook masala using Indian spices. 

● Heat oil in a frying pan or kadai, add finely chopped onion, garlic and ginger. Cook for 4-5 minutes or until it turns light pink.

● Add passatta sauce and until thickens the mixture.

● Then add all the Indian spices and salt, mix well and cook a further minute or so.

● Now add lemon/lime sauce. 

● Add air fried chunky chips.

● Mix throughly but gently, sprinkle chaat masala and freshly chopped coriander/cilantro.

  • 600g frozen oven chunky chips or fries
  • 250ml  passata or tomato puree
  • 3 tablespoon oil
  • 1 medium onion finely chopped
  • 3-4 garlic cloves finely chopped  
  • 1 inch fresh ginger finely chopped
  • 2 teaspoon. red chilli powder
  • 1 teaspoon ground cumin and coriander
  • 1/2 teaspoon garam masala
  • 1 tablespoon lemon juice
  • 1 teaspoon chaat masala
  • 4-5 tablespoon finely chopped coriander
  • Lemon/lime wedges to serve


  1. Preheat the air fryer 195⁰ C or 383⁰ F for 4 minutes. 
  2. Then place frozen chunkey chips and air fry for 12-14 minutes, keep an eye on them after 10 minutes. 
  3. Also shake in between around at 6-7 minutes.
  4. Heat oil in a pan.
  5. Add onion, ginger and garlic, fry until it turns light pink.
  6. Add passatta or tomato puree and cook on low heat for 5 minutes or it's raw smell go away.
  7. You'll see the sauce leaves moisture and thickens.
  8. Then add red chilli powder, garam masala and ground cumin-coriander.
  9. After a couple of minutes add lemon juice.
  10. Mix well and add air fried or baked chips.
  11. Mix through and sprinkle chaat masala and freshly chopped coriander.
  12. Serve with lemon/lime wedges and consume immediately.
