Masala Mogo Chips are a close relative of Masala Chips! Air-fried cassava, yuca or mogo is tossed in a delicious East-African Kenyan masala to create an exciting side or snack!

Air-fryer Mogo is something you just have to try! The cassava stays soft and sweet in the middle but forms the perfect crispy top that is just so irresistible. The sweet and sour masala clings to the mogo and with each bite, you unlock new flavours!

Btw, its best served in a massive platter and let everyone dig in with their fingers!

You may recognise Masala Mogo, which is a slightly different recipe. We can't get enough of our Indo-Chinese Masala Mogo where deep-fried mogo is coated in a soy, garlic and chilli sauce.

Ingredients for Masala Mogo Chips:

Cassava/Mogo - we have used frozen cassava. You can use fresh cassava too. 

Passata - use either passata for ease or puree chopped/plum tomatoes until smooth

Onion Granules - easy to find onion powder or granules. You can also use fresh onion that has been pureed but I think that the dried powder gives a much better earthy flavour and fresh onion will be too strong for the mild and creamy cassava

Garlic Granules - again use dried garlic for ease or use fresh - again I feel like powdered works better. 

Red Chilli Powder

Ground Cumin and Coriander

Sugar - the sugar and lemon juice give the special sweet and tart Gujarati flavour - definitely do not skip these ingredients!

Lemon Juice - use freshly squeezed or bottled


Oil - use a flavourless oil to coat the cassava when air-frying and also to cook the masala

Coriander leaves - fresh coriander leaves to garnish

Air-Fryer Mogo Chips

I'll eat mogo in whichever way you give it to me. Sometimes, after boiling I have so little patience that I'll eat a couple there and then.

I have actually found that air-fryer mogo tastes the best, it is even better than deep-frying! Bonus that it is a bit better for the waistline!

Can I make Masala in advance?

Yes, you can. Now I am back to work and don't get much time to prepare meals, I take homemade masala from home. Simply make the masala in advance and keep it a jar and store in the refrigerator for one week. 


This is a dish that cannot really be made in advance. The mogo will go chewy as it cools so is best eaten immediately.

How to make Masala Mogo Chips:

The first step is to cook mogo or cassava

1. Bring to boil a big pot of water, add little salt and oil then add frozen cassava. Once cooked, drain the water and leave it aside to cool for 5 minutes.

2. Cut the mogo into chips.

The second stage where mogo chips are air fried in the air fryer

3. In a bowl add chips and oil, mix well, meanwhile preheat the air fryer at 205C for 5 minutes.

4. Arrange mogo chips in one layer in the air fryer basket.

5. Select 205C for 12 minutes.

6. At 6 minutes shake the chips. (pic 6-7)

8. Mogo chips are done, leave it aside.

The third stage, make the sauce.

9. In a pan or kadai add oil and passata or tomato puree and cook on medium heat and reduce.

10. Add garlic and onion granules or powder, and cook further for 1 minute.

11. Now add red chilli powder and ground cumin and coriander, mix well.

12. Then add lemon, sugar and salt and cook for few seconds more. 

13. Now add air-fried mogo chips, and combine.

14. Cook till every chip well coated with the masala.

Air fried mogo , cassava or yuca chips are tossed in irresistible East African Kenyan Masala which is vegan! Serve as a starter or snack.

  • Air fryer
  • Heavy based pan/kadai
  • Spatula 
  • 500g frozen cassava
  • 3 tbsp. oil
  • 200ml tomato puree or passata  
  • 1 tsp. onion granules/powder
  • 1 tsp. garlic granules/powder
  • 2 tsp. red chilli powder
  • 1 tsp. ground cumin ad coriander powder
  • 1 tbsp. sugar
  • 1 tbsp. lemon juice
  • Freshly chopped coriander
  • lemon wedges


  1. Add frozen mogo to a large pan of boiling water along with some oil and salt.
  2. Do not overcook.
  3. Once cooked, discard the water and let the mogo cool down.
  4. Cut the mogo into chips and coat in some oil.
  5. Preheat the air fry and cook the chips until crispy and light brown.
  6. Keep it aside. 
  7. Heat oil in a heavy based pan or kadai.
  8. Add tomato puree and cook until 1/3 left.
  9. Now add garlic and onion granules. 
  10. Cook for another minute.
  11. Then add red chilli powder and ground cumin and coriander.
  12. Add sugar, lemon juice and salt.
  13. Mix well, cook further for a minute then add air-fried cassava chips.
  14. Nix thoroughly and sprinkle freshly chopped coriander.
  15. Serve immediately with lemon wedges.


If you use fresh cassava, peel and cut then boil or steam.
