A couple of weeks back, we went to a restaurant for a birthday meal and we tasted their Mashed Potato dish. Oh boy, I must admit that I've never eaten mashed potato like theirs before, it was super creamy and the fluffiest, almost like whipped cream. That taste lingered and almost I was going to make this at home, but thank goodness, in the argument of mind and heart, in the end, mind won and I left the idea of making mashed potato as we try very hard not to consume many potato dishes. Well, I had to make something similar as I had craving for that taste and texture and in less than an hour I had this cauliflower mash and the potatoes were out of my head, did not miss any dairy taste either. It's almost like a regular mashed potato, but better!

Nutritnist and culinary experts working together to bring healthy and alternative ideas and recipes to the market. Here we have a great substitute cauliflower, for potatoes. Naturally, cauliflower is low in carbs and calorie and high in nutrition,  comparison to white potatoes.

TASTE AND TEXTURE OF CAULIFLOWER MASH


You can achieve the same texture as mashed potato, no big deal. If you want thick, creamy and velvety texture use butter, cream cheese or whipped cream. That's fine, what about taste? Okay, let me tell you the truth if you are really loving your traditional mashed potato, you'll feel the difference as it doesn't taste exactly like mashed potato but it is amazing. Well, but you can get used to it very quickly. The texture is the key here try not to keep cauliflower mash chunky.

HOW EASY TO PREPARE CAULIFLOWER MASH


Cauliflower Mash recipe is super easy as traditional Mash Potato, also you won't require many ingredients and a lot of time. Either steam or boil the cauliflower florets, blend with a hand blender or food processor, but if you want a little work out for your biceps use a traditional potato masher until fluffy and smooth, flavoured with garlic, cream, cheese, butter, or olive oil and garnish it with freshly chopped herbs.

DO NOT HAVE ELECTRIC PRESSURE COOKER?


No problem, this recipe can be prepared on a stovetop or stovetop pressure cooker. In a normal pressure cooker, add water put a trivet and cook the cauliflower for one whistle. In the pan, the same procedure can be done but it will take more time to cook the cauliflower.

CAN I FREEZE CAULIFLOWER MASH?

Experts are advising NOT  to freeze cauliflower mash as it will release the water once it defrosted however, you can make ahead for a day and leave it in the refrigerator. Heat it up in the microwave for a good couple of minutes before serving.

INGREDIENTS FOR  VEGAN CAULIFLOWER MASH


Cauliflower fresh better but you can use frozen too.
Vegan milk
Vegan butter or olive oil
Vegan sour cream or yogurt
Salt, black pepper and nutmeg powder
Fresh chives


HOW TO MAKE CAULIFLOWER MASH IN INSTANT POT


Clean and remove all the green leaves of cauliflower but keep cauliflower intact.
Wash it under the hot running water.
Place 1/2 cup water in the inner pot, and put trivet.
Place cauliflower head on it and close the lid.
Select the steam button and press for 2 minutes.
Release the steam quickly and remove the steamed cauliflower into another plate.
Cut the cauliflower into small pieces.
Clean the inner pot and select saute button for 4 minutes.
Add butter, once melted add steamed cauliflower and milk.
Start mashing the cauliflower with the masher or use a hand blender until the milk is absorbed.
Add sour cream, nutmeg, salt and pepper powder.
Mix everything well, sprinkle chives.
Transfer in a serving bowl, pour some melted butter or olive oil and garnish the mash with the remaining chives and black pepper.

Vegan Cauliflower Mash

This easy and straightforward Creamy vegan cauliflower mash recipe prepared in an Instant Pot. It takes less than half an hour to put together.
prep time: 5 minscook time: 15 minstotal time: 20 mins

ingredients

1 medium size cauliflower ( approx 500-600g) trimmed green leaves.
3 TBSP. Vegan Butter or Olive Oil
1/4 cup vegan sour cream or cream cheese
4-5 TBSP. Vegan Milk 
Salt
Black Pepper
Pinch Nutmeg Powder
Garlic Powder or granules 
Freshly chopped Chives 


instructions

Arrange Instant Pot or other electric pressure cookers according to manufacture instruction.
Add 1/2 cup plain water into the inner pot.
Put a trivet in the inner pot and place whole cauliflower on it.*
Select steam and press for 2 minutes. ( Because it's the whole cauliflower, it won't fall apart or get mushed )
Once done, quickly release the pressure and carefully remove the cauliflower.
Cut the cauliflower into the small pieces.
Remove the water from the inner pot, clean the pot again and dry it with the clean kitchen towel.
Select saute button and press it for 3-4 minutes.
Add butter, once it starts melting add steamed cauliflower pieces.
Mix well, add milk and start mashing it with the potato masher or you can use a hand blender. 
Add cheese or cream, salt, pepper, nutmeg and garlic powder.
Mix all well, the mash will thicken slowly.
Once done, transfer it in a serving bowl and topped it up with garnish it with pepper powder and garnish it with freshly chopped chives.
Enjoy hot as side dish with your favourite meal. 

NOTES:

This dish can be prepared in a normal pressure cooker or pan.
Want to make this dish as a vegetarian, go ahead and use all the dairy products instead of vegan.
Don't have chives? use thyme, parsley, rosemary or coriander.

  9. I love cauliflower just about every way. I made mashed cauliflower a few years ago for Thanksgiving and tried to pass it off as mashed potatoes, some people didn't know the difference!
