Indian breakfasts and paratha are synonymous, it is comfort food for many. In most of the North Indian homes, breakfast or brunch is incomplete without paratha, it could be plain paratha or stuffed paratha smeared with ghee or butter and what can be better with than these scrumptious and moreish Palak, Paneer and Green Peas paratha.

Usually, regular parathas are prepared plain or various kind of stuffing such as potato, peas, paneer or cauliflower or lentils, actually stuffed parathas are a good way to experiment with spices and flavours, this paratha recipe of mine is a little different but totally mind-blowing.

I got inspired to cook this paratha from the famous Indian veg curry Matar Paneer and Palak Paneer. So  In this recipe, I have prepared outer layer dough with spinach puree and stuffing is prepared with crumbled paneer and green peas. Although I have used many ingredients, still these parathas weren’t overpowering with strong flavours, when you bite each and the flavour of every ingredient was coming through nicely.

These filling and stuffed paratha are perfect when you want to have something delicious and well balanced but don’t want to make an elaborate meal. These parathas don’t need any accompaniments with it as they are full of flavours, only plain yogurt or a cup of masala chai would do the job too.

ingredients

For the outer layer – Spinach dough
3 cup whole wheat flour ( Roti aata )
1 tbsp. ginger-green chilli puree
Salt to taste
1 tsp. ajwain seeds ( Carom seeds )
2 Tbsp. oil
For the Paneer and Peas filling
1 cup green peas (matar)
1 cup grated paneer
1 Tbsp. oil
1 tsp. cumin seeds ( Jeeru)
Pinch asafoetida  ( hing)
1 tbsp. ground cumin and coriander ( dhanajeera powder)
2 Tbsp. green chillies and ginger minced ( adu-marcha)
1/2 tsp. dry mango powder ( amchoor)
1/2 tsp. dry fenugreek leaves ( kasoori methi)
1/2 tsp. garam masala
salt to taste
2 tbsp. Freshly chopped coriander leaves ( Dhaniya)
For the Paratha
More flour to roll the paratha
Oil for shallow frying

instructions

 Spinach dough
In a wide and big plate place all the ingredients and mix the ingredients with your hands.
Knead a pliable dough, you won’t need any water to knead the dough.
Cover the dough with the clean kitchen towel and leave it aside.
Paneer and Peas Filling
Thaw the peas in a microwave or if using fresh steam them.
In a food processor crush the peas, but don’t make a puree.
In a non-stick pan heat the oil and add cumin seeds.
Once it crackles add hing and minced chilli ginger.
Fry for few seconds then add peas and grated paneer.
Add salt and other spices along with kasoori methi.
Mix everything well and cook the mixture for a couple of minutes.
The mixture should be totally dry.
Turn off the heat and transfer the mixture to another plate and leave it to cool.
Paratha
Make 12-15 lemon size balls from the dough. Roll thin out one ball on floured surface board about 4-5 ” diameter. 
Place a tablespoon of stuffing on the rolled dough.
Gather the sides and bring them together. Once again make a ball.
Press gently dough ball and dust some dry flour and roll out once again.
Heat tawa or griddle and cook on both side applying little oil till light golden.
Serve hot with plain yogurt or raita.

NOTES:

Lemon juice can be used instead of dry mango powder.
Adjust spiciness according to your liking.

loving this palak paneer and peas all together in this paratha. Must be flavorful and delicious paratha. I love using puree in flour it gives such a beautiful color.

Never tried palak , paneer and green peas together in a paratha but the dish sounds so filling , wholesome and with all those spices , flavorful too ! Would try it soon. Love your props and presentation Jagruti !
