Lean Greens - Product review

Talking about eating healthy is all and well, but actually doing it is something else. With busy lifestyles and supermarkets stocked with ready meals, it's hard to focus on our health and wellbeing. Luckily, Lean Greens has introduced their Super Greens Powder - UK's number 1 powdered green supplement. 




The Super Greens Powder aims to reduce bloating, cravings and prevent the afternoon slump by increasing natural energy. It works by packing a long list of active ingredientsWheatgrass, Barley Grass, Spirulina, Chlorella, Alfalfa, Spinach, Broccoli, Carrot, Blackcurrant, Blueberry, Digestive Enzyme Blend, Green Tea Extract, Siberian Ginseng, Stevia Leaf. Phew! 




Kindly, Lean Greens sent me their starter pack to try out at home. It contained a tub of Super Greens Powder, a shaker and two sachets of their Trim Formula protein isolate. I couldn't wait to try it the next morning and start feeling the benefits! 

I make the effort to cook foods that do contain nutritious ingredients, but I am grateful to have the help wherever I can. Knowing that if I drink a glass of the green powder, I have already done my body some good and started the day off well!

So how did I get on?



It was so easy to prepare. All I did was mix 250 ml of cold water with a large scoop of the powder. It was certainly quicker than preparing a green smoothie. As someone who is into green juices and has introduced their family to green juices, the powder was actually quite palatable! Don't let the bright green colour put you off! It really isn't at all bad. I had it first thing in the morning before my cup of masala tea as I wanted to give a chance for the alkalising ingredients to work their wonders. 

The shaker provided was foolproof and super simple to wash up after! I did notice an increase in my energy levels during the cold winter. I even gave some for my daughter to try whilst she was at uni and she also claimed feeling more refreshed than usual. We are not surprised that Super Greens has received such good reviews from their other customers! You can buy from Amazon here


I'm so happy that I have found a supplement to support me and my families needs alongside our meals.

These gorgeous Vegan Boussou la Tmssou, shortbread cookies, reminds you of snowballs and originally are from Algeria. They melt in your mouth and these moreish cookies are not to be missed this festive season.  They can be great as Christmas cookies or any time of the year and very nice alternative treats for those friends and family who are vegan. Definitely, these bite-size delights will light up anyone's face!

"Tis the season to be jolly and bake cookies" In our house, Christmas and cookies go hand in hand and I don't think there is anything more festive than a good shortbread cookie. Just curl up by the fire, pour some hot chocolate and munch a few of these delectable cookies and have fun and laughter with the ones you love! Oh yes, all we want for Christmas is food:)

This year for  Christmas baking I was looking some inspirations to get baking, generally I don't bake much so in my case baking ideas just don't pop in my head to start baking, it has to be something special that would push me to go into that baking mood. As I was about to search online, what do I see about outside? Freaky snow started falling, people in Britain went crazy to see that amount of snow and especially social media flooded with such mesmerising and unique snow pictures, cute and very creative snowman pictures. While I was enjoying snow falling down on the trees, I had cravings for eating white snowballs. So thought of a treat that would resemble small snowballs. Quickly I searched for snow themed food, to my surprise a lot of recipes turned up from drinks to desserts, wow, and I thought about baking these Boussou la Tmssou!

Boussou la Tmssou, delicate and delightful cookies which reminds you snowballs, dipped in orange blossom water and then covered in icing sugar hails from Algeria. The name Boussou la Tmssou means 'Kiss it, don't touch it'. I guess this name was given to these cookies because they are extremely delicate to handle, while you are making and eating, these cookies need to be handled with so much care and attention.  Although they need extra care, these cookies can be prepared in a such a short time and you won't need any special ingredients. Traditional Boussou la Tmssou made with Ghee, (some use melted ghee, some use set ghee). I had almost 2 kg organic virgin coconut oil bottles lying in my kitchen, so I thought of making these cookies as vegan.

While I was baking these cookies, the husband said it's beginning to feel like Christmas!  The festive season is in full swing in my house and we are looking forward to spending the most wonderful time of the year with loved ones and devouring all these yummy goodies.

Vegan Boussou la Tmssou (Algerian Shortbread Cookies)
These melt in your mouth cookies are so easy to make with only basic ingredients, perfect for a gift or just to enjoy them yourself.
Ingredients
  • 225g Plain flour - Maida
  • 40g Powdered sugar
  • 110g Coconut oil melted
  • 100-120ml Orange blossom water
  • 150g Powdered sugar for coating
Instructions
In a bowl add plain flour and 40g powdered sugar.Mix well then add melted coconut oil.Mix all the ingredients with the hands and form a dough.Divide the dough into small equal sizes and roll into balls.Meanwhile, preheat your oven to gas mark 3-4 for 5-7 minutes.If you want you can press the cookie balls with your thumb and make slightly flat, I did half of them then left it.Line them on a baking tray and bake them for 15 minutes or until bottom parts of the cookie gets slightly golden brown.Remove it from the oven and leave it to cool completely. Once they are cooled dip them into orange blossom water one by one and roll into the powdered sugar to coat them evenly, leave them on a tray for at least 4-5 hours at room temperature.Then store them in the airtight container and keep it in a refrigerator. Bring it to a room temperature for 30 minutes before consuming. Enjoy!

Ingredients
  • 400g Raw Almonds
  • 4 Tbsp. Fresh chopped rosemary
  • Salt to taste
  • 2 tbsp. Butter ( vegan use olive oil) 
  • 2 tsp Dark brown sugar
  • Pinch Freshly ground black pepper
  • 1 tsp. Red Chilli powder or flakes
Instructions
Place almonds in a pan and dry roast them for 8-10 minutes.In a big bowl add butter, sugar, rosemary, salt, chilli powder and black pepper powder.As soon as almonds are roasted add them into the bowl and quickly start mixing.Once they are coated evenly with the spice mixture, serve warm.If you want to give it as a gift, leave nuts to cool completely then pack them in a jar. Enjoy!

So I have come up with two flavours which I love adding to my cooking. Cardamom and Cinnamon Caramel Fudge
These Rich, Tasty and Delicious Cardamom, Cinnamon and Caramel Fudge are so easy to make which melts in your mouth and it is perfect for festive holiday and makes a darn good gift.
Ingredients
  • 1 Tin (397g) Sweetened Condensed milk
  • 125g Butter
  • 450g Soft brown sugar
  • 130ml Milk full fat
  • 1 Tsp. Cardamom essence
  • Big pinch Cinnamon powder
Instructions
Line a tray or plate with foil.In a thick bottom saucepan place butter and sugar.Then add condensed milk and normal milk.Keep mixing everything and let the mixture cook, keep stirring constantly so mixture doesn't get burn.Keep stirring for 15 minutes continuously. Be careful mixture boils a lot at this stage.After 15 minutes, switch off the heat, and keep stirring the mixture. You will be able to see mixture getting thicker at this stage.Now add vanilla essence and cinnamon powder and mix well. Pour the mixture into prepared tray and smooth it as soon as possible.Leave it to cool for at least 2-3 hours and cut into desired shape.Store in an airtight container or arrange in a box and give it as a gift.Enjoy!

Peanuts and Sesame Seeds Kachariyu - Peanuts and Sesame Energy Bites


Peanuts and Sesame Seeds Kachariyu can have a place in your healthy eating plan and winter essential menus. This wholesome, refined sugar-free and nutritious Gujarati winter dish is delectable and the simplest dish you can prepare to fight those winter blues.

Kachariyu is a traditional Gujarati delicacy which is eaten during winter times and made with very basic ingredients such as sesame seeds, Jaggery and Peanuts. It is very healthy and nutritious.

This Kachariyu is prepared with roasted peanuts, sesame seeds, Jaggery, some winter spices and nuts. Generally, traditional Kachariyu prepared with ONLY sesame seeds and crushed along with Jaggery and spices but this time there is a little twist.  Oh yes, my mind is always thinking of alternatives. Don't go binge eating as this item is not guilt free as there are jaggery and dates in this recipe which can spike your sugar levels.

Peanut and Sesame Kachariyu
Peanut and sesame Kachariyu is a homemade nutritious winter warmer recipe can be made very easily.
Ingredients
  • 150g Plain Peanuts
  • 150g Sesame seeds (white or Black)
  • 100g Jaggery grated
  • 100g Medjool dates pitted
  • 50g Almonds chopped
  • 30g Desiccated coconut
  • 3 Tbsp. Melon and poppy seeds
  • 2-3 Tbsp. Dry ginger powder
Instructions
Dry roast peanuts and sesame seeds separately.Let it cool and remove peanuts skin.In a food processor or grinder add almonds and peanuts, grind until you see oil oozing out of the almonds and peanuts.Remove it from the grinder bowl and add sesame seeds and melon seeds, grind the sesame seeds until you see oil coming out of the sesame seeds.Now add jaggery, dates, ginger powder, desiccated coconut, poppy seeds and peanuts mixture.Now grind everything so well in the grinder.Remove it from the grinder bowl and make ladoo or leave it as it is.Garnish it with the almond and pistachio slivers if you like.Enjoy this winter delicacy in the morning.

Homemade Billionaire's Hot Chocolate
This homemade Billionaire's Hot Chocolate is so Christmasy! It's rich, creamy and so delicious, surely is going to warm up the cockles of your heart!
Ingredients
  • 2 Tbsp. Good Quality hot chocolate powder or grated chocolate flakes
  • 3 Tbsp. Shortbread crumbs
  • 3 Tbsp. Caramel
  • 3-4 Tbsp. Freshly whipped cream
  • 120-130ml Full fat milk
Instructions
In a clear serving mug first, add 2 Tbsp. shortbread crumbs and press it down with the spoon.On top of that pour caramel and let it sit for 5-10 minutes. Now heat the milk in a saucepan and bring it to boil.Add hot chocolate powder and mix it well.Once the hot chocolate milk is ready, pour over the set caramel. Quickly top with whipped cream and sprinkle shortbread crumbs.Serve immediately.

Homemade Billionaire's Latte
This homemade Billionaire's Hot Latte is so Christmasy! It's rich, creamy and so delicious, surely is going to warm up the cockles of your heart! You won't need Coffee machines to make this amazing Latte.
Ingredients
  • 120 ml Full fat milk
  • 4 Tbsp. Cream
  • 1 tsp. Instant coffee powder
  • 3 Tbsp. Shortbread Crumbs
  • 3 Tbsp. Caramel
  • 3 Tbsp. Melted chocolate
Instructions
In a clear serving, mug add shortbread crumbs and press it with the spoon.Now add caramel and let is set for five minutes.Pour melted chocolate on top of the caramel and let it sit for a while.Dissolve instant coffee powder with little warm water or milk and pour over set chocolate.In a saucepan heat milk and cream, bring it to boil and constantly beat the milk with the egg beater or frother to create foam. Then pour the milk into your coffee mug slowly, keep foam away while pouring the milk. Then add the foam to the top.Sprinkle some instant coffee powder on top add serve straight away. Enjoy!

Being Indian, I always thought that curry can be found only in Indian Cuisine, hahaha how wrong I was. Now that the whole world is at our fingertips and discovering so many facts and taking virtual tours of the globe I gained so much knowledge about other cultures and really appreciating their wonderful cuisines too. Along with Indian curries we have already tried Jamaican, Thai, Mauritian and Japanese Curries, just so delicious and we love all of them!

I came to know about vegan yasai katsu curry a couple of years back, and I asked their staff to omit eggs from my curry and she said yes we can do that for you and they made a vegan katsu curry for me. It was an instant hit with me and my family. Well, since then we are a huge fan of vegan Japanese food, check my Vegan Sushi recipe. I simply fell in love with Japanese cuisine because I thought that Japanese don't just serve food but they serve incredible art on the plate. Visually you start eating.The arrangement of the food and its colour and shape boggles the mind!  It's a cuisine that satisfies all the senses.

Since I had vegan katsu curry in the restaurant, I had chance to try my hands on making this curry at home a couple of times. It's nice change to Indian curry, but never had a chance to post it on the blog as always wolfed it down before I photographed it. But this time, I had to control myself and quickly photographed, I must admit here as pictures don't do justice to the deliciousness that was in our bowl.

So what is Katsu and in Katsu Curry? Katsu curry was developed in the 1940s by a customer at the Swiss Grill Restaurant in Japan. It's now taken the UK by storm, especially the vegan version. Katsu means Cutlets in Japanese, and curry has three main section, a crispy panko (Japanese breadcrumbs) breaded vegetables, Tofu or non-veg ingredients. A curry sauce which is mildly spiced and sweet, delicate and flavourful served with plain boiled rice and pickled ginger.  Making vegan Katsu curry at home is fairly simple and not too much time consuming at all but if you are craving a katsu curry and want to eat in less than an hour, products from Yutaka can curb your cravings. Folks from Yutaka sent me their sample products of Panko Breadcrumbs and Katsu Curry paste. I could not believe how easy it was to prepare this curry in less than half an hour as hardly I had to do any peeling and chopping and there was no compromise on taste. I followed the exact method to prepare this curry except I did not deep fry the vegetables and tofu but baked in the oven. So if you don't want to make this curry from the scratch, but you want to make at home without hassle use Yutuka products and enjoy this vegan delight.


Notes:-
I did not deep fried the vegetables, so I slightly softened them in the microwave for 40 seconds before breading and baking.

Vegan katsu Curry
Vegan Katsu Curry, simple and fresh, delicate and delicious! A recipe with panko breaded vegetables and tofu served with mild and flavourful curry sauce, rice and pickled ginger.
Ingredients

Curry Sauce
  • 1 Large white onion chopped
  • 1 Tbsp. Vegetable oil
  • 800ml Water
  • 100g Yutaka Japanese style curry cube
  • Vegan Katsu
  • 1 Large aubergine
  • 1 Large Sweet Potato
  • 1 packet Drained and pat dried Tofu
  • 100g Plain flour
  • 50g Cornflour mixed in little water
  • Salt and pepper
  • 200g Yutaka panko
  • Olive oil
Instructions
Make curry sauce by heating a little oil in a pan, and fry the chopped onions on a low heat until lightly browned.Add 800ml cold water and bring it to boil.Turn the heat to medium and let the water simmer for 7 minutes. Then let the sauce cool down for a few minutes.Add 100g curry cubes into the sauce, stir until fully dissolved and simmer on low heat until thickened.Make Vegan Katsu Cut the sweet potato, aubergine and tofu into half cm slice and season with salt and pepper.Dredge in flour then dip into the cornflour mixture and coat with Yutaka Panko.Heat the oil in a pan and deep fry for a couple of minutes or until golden brown.Baked katsuPreheat the oven to gas mark 5-6.Line a baking sheet with tin foil and coat with cooking spray.Place panko breaded vegetables and tofu and once again coat the ingredients with cooking spray.Bake the vegetables for 10-12 minutes on each side or until both sides are golden brown.Heat the sauce once again, and serve katsu with curry sauce and rice.Douzo meshiagare (Enjoy your meal)
