I am with you, we all get excited to devour those yummy and delicious fasting recipes, but easily get tired of it too by having the same dishes again and again.

And because there is a lack of vegetables in the fasting dishes, the meals seem to be heavy.


Fikar not! ( Not to worry ) today I am sharing this farali muthiya recipe with an added dash of innovation as I have included one vegetable that can be consumed while you fast.

This dish is fairly healthy and delicious to eat during the fasting season. Team, this irresistible muthiya with amaranth chaas ( buttermilk ) to make a satiating meal.

Dudhi Na Farali Muthiya / Muthia

Dudhi or Lauki Na Farali Muthiya, are sumptuous and flavourful same as normal Dudhi Na Muthiya. The tempering of aromatic curry leaves, red chillies and sesame seeds.

ingredients:

Muthiya
  • 1 cup Mixed farali flour
  • 1/2 cup Rajgro - Amaranth flour
  • 1/4 cup Buckwheat flour - Kuttu ka Aata
  • 1/4 cup Shingoda flour - Water chestnut flour
  • 1 cup Grated dudhi ( bottle gourd )
  • 1/2 cup Grated potato
  • 3 tbsp. Roasted peanut powder
  • 2 tbsp. Ginger chilli paste
  • as needed Sindhav / Sendha namak
  • 2-3 tbsp. Fresh chopped coriander
  • 1/4 tsp. Freshly ground black pepper
  • 2 tbsp. Sugar
  • 3 -4 tbsp. Yogurt
  • 2 tbsp. Oil
Vaghar
  • 2-3 tbsp. Oil
  • 1 tsp. Cumin seeds
  • 1 sprig Curry leaves
  • 1 Dried red chilli
  • 1 tbsp. Sesame seeds
garnishing
  • handful Fresh finely chopped coriander
  • 1 tbsp. Grated coconut
  • 1 Lemon wedges
For amaranth chaas
  • 1 cup Plain natural yogurt
  • 1/4 cup Popped amaranth seeds ( Rajgro dana )
  • Salt to taste
  • 1/2 tsp. Black pepper powder
  • 1 tbsp. Fresh coriander

instructions:

How to cook Dudhi Na Farali Muthiya / Muthia

  1. Place all the ingredients of muthiya in a big bowl.
  2. Mix well and knead a soft dough, if you need to add a couple of spoon water.
  3. Apply a little oil on your hands and divide the mixture into 2-3 parts.
  4. Then pressing in your fists into cylindrical shapes and place in a steamer.
  5. Whichever method you prefer.
  6. Insert a knife after 20-30 mins and see that it comes out clean, meaning its cooked.
  7. Let it cool a little and slice each roll into thin oval-shaped pieces.
  8. For vaghar heat oil in a kadai, add cumin seeds, after they splutter add rest of the ingredients except coconut and coriander.
  9. After few seconds add cut muthiya pieces and mix gently and sauté them for few minutes or until they get slightly golden brown.
  10. Switch off the heat, garnish it with coconut and coriander.
  11. Enjoy with amaranth chaas or masala chai.
Chaas
  1. Combine yogurt and 3 cup water in a jug and whisk.
  2. Add all the other ingredients and mix well. 
  3. Serve straight away.
  4. Enjoy!
