Guvar Dhokli Nu Saak

Guvar Dhokli nu Saak, is quite popular authentic dish in Gujarati households. It’s a main course dish made of multigrain flour dumplings (dhokli) cooked with Cluster bean. In this recipe flour dumpling are made of wheat, gram and millet flours and this dish can be made in jiffy, if using the instant pot or preparation done early.

GUVAR DHOKLI NU SAAK

Basically, Guvar dhokli nu saak is a cluster bean and dumpling curry that is delectable, robust and authentic recipe from the region of Saurashtra aka Kathiyawad in the state of Gujarat, India. 
Guvar means cluster bean and Dhokli translates dumplings.
For Guvar dhokli nu saak, you don’t require any lentils or lentil soup and dhoklis are not rolled out using a rolling pin. 
This recipe stands out as you can have as main course with Rice, round and soft Gujarati rotlis or paratha or if you are like me just have it on it’s own ,  the way you devour Daal Dhokli, with plenty of colourful salad. satisfies your taste buds to give a senses of spicy and sweet fulfilling and is an earthy flavoured dish.

As a foodie and food blogger, I always experiment with traditional dishes, maybe I would add one new ingredient or omit one. It’s always trial and error and with that I have had many disappointments and successes too.

This time I chose Guvar Dhokli nu Saak to experiment with, not a major one, but I knew that maybe this experiment can ruin my dish as we all are more than happy with the traditional recipe. 
Generally, for this saak/Shaak, dhoklis are made with wheat and gram flour. I added Bajra ( Millet ) flour and finely chopped spinach in dhokli dough and the outcome was so successful that I had to put this recipe here for you guys.

What is Guvar in English?
In english Guvar or Gavar known as cluster bean. Guvar also called Guvarphali, gwar, or gawar. Cluster bean is the annual legume and it is the source of guar gum. They are so similar to french beans but more tougher in texture and flat in shape. 
Tender and young cluster beans eaten as green beans, and they are good source of protein and fibre. 
Cluster beans are very slight bitter in taste but the aid of jaggery, sugar, lemon juice or tamarind balances well. 
Where can I find Guvar cluster beans?
In the UK or USA fresh and frozen guvar can be found in most south Asian grocery stores. In major British supermarket cluster beans available in bags, in frozen section. 
How to select fresh Guvar?

Fresh and young cluster beans are green and without any spots or wrinkles. They should be firm but when snapped it should break easily and doesn’t have big beans inside them. 
How to prepare Guvar for recipes?

Even tender and young guvar needs trimming, just pluck top and tail and then pull downwards if any strings, it will come down too. Discard strings. 
Then using a sharp knife cut into small pieces, if they are tender you can snap in half just by your hands. 
What else can I make with cluster beans/Guvar?

Guvar is very popular vegetable during the summer time in India, but in the UK it is available throughout the year. 
We enjoy making Guvar Nu Saak, Guvar Bateta Nu Saak and Guvar Nu Dahiwaru Saak with Bajri Na Rotla. 
In south India it is added in making Sambar and Sindhi communtity uses in their traditional recipe Sindhi Kadhi.
Can I freeze fresh Guvar?

Yes, you can. Once you have young and tender guvar, 
first clean them under the cold running water.
remove top and tails of the beans.
cut the beans into half or thirds if they are very long.
dry it using a clean kitchen towel and store in freezer-proof zip lock bags or in air tight container. 
store in the freezer for 3 months. 
when making curry/sabji use frozen guvar. 
TIPS

Make sure you always get fresh and young guvar, mature guvar takes lots of time to cook, also it is very fiberous and chewy. 
Always cook guvar with garlic (lasan), carom seeds (ajwain) and asafoetida (hing) as cluster beans are packed with protein and takes time to digest and sometimes causes gas too. 
If following Jain or satvik diet, skip garlic. 

INGREDIENTS FOR GUVAR DHOKLI

● Cluster beans we need tender guvarphali for this recipe. You can use frozen too. If you have mature beans, it may take extra time to cook.
● Flours – I have taken wholewheat, gram and millet flour. You can skip millet flour if you wish.
● Spices – will need basic Indian spices and masalas such as red chilli and turmeric powder, ground cumin and coriander power, mustard, carom seeds and hing.
● Ginger -garlic puree – for a typical kathiyawadi taste garlic is must, but for any reason you can not have it then skip it. Fresh or frozen works fine.
● Spinach – for traditional recipe you don’t need spinach. 
● Jaggery – adds a little sweetness and adds shine to the dish. 
● Oil – preferably use sunflower or peanut oil to bring out the best of flavours.

Ingredients
 
 

  • 250 g tender cluster beans Guvar cut into small size
  • 5 tablespoon oil
  • Salt to taste
  • ½ teaspoon. mustard seeds Rai
  • ¼ teaspoon carom seeds Ajwain
  • Pinch hing
  • 1 teaspoon ginger-garlic paste
  • ½ teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon ground cumin and coriander dhana jeeru
  • 1 tablespoon jaggery Gor
  • ½ cup millet flour Bajri atta*
  • ¼ cup whole wheat flour Roti atta
  • 2 tablespoon gram flour Besan
  • ¼ cup cleaned finely chopped spinach**
  • Salt to taste
  • 3 tablespoon oil
  • ½ teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon carom seeds Ajwain

Instructions
 

  • In a big bowl add all the dhokli ingredients and add very little water at a time and knead stiff dough.
  • Now make very small balls ( marble size ) from the dough, then press them slightly to make round and flat dhokli.
  • Once all the dhoklis are made, cover with the clean cloth and leave it aside.
  • To preapare guvar gravy, heat oil in a kadai and add mustard seeds.
  • Once they crackle, add ajwain and hing.
  • Then add washed cluster beans and cook for few seconds.
  • Add 2 cups of water and add ginger garlic paste and all the masala and salt.
  • Do not cover the kadai, and let the cluster beans cook for 7-8 minutes.
  • Add pressed dhokli one by one, add little water if needed.
  • Cover the kadai with the lid and cook Guvar Dhokli until done.
  • It will take another 8-10 minutes.
  • Add jaggery and cook further one minute.
  • Turn off the heat and garnish it with the fresh coriander.
  • Serve as a main course with rotli, rice and salad or have it on it's own.
  • Enjoy !!!

Looks super delicious . I always make my dokri with 1/2 cup Juwar atta, 3/4 cup rotli atta and 2 tb sp channa atta. The dokri taste better then just rotli atta. Rotli atta dokri is very lissi, like slimy .

Love this vegetable.. Being Gujarati i have tasted this yum veg many times. We also prepare with Freanch beans . That also taste so good. Feeling hungry now 😂😂😂😂
