The most wonderful and magical time of the year is here where little things bring us together.  It's the time of the year where parents want to spoil their kids, but it might not be for the reasons we may think. Many of us have missed the excitement we felt on Christmas day as children or many of us simply love to showering our offspring with gifts helps us to recapture some of the magic of our own childhood !

Buying gifts is a great tradition where we show and express our love to loved ones, but it should not be the only possible tradition ? Surely we can create new ones.  I think it is as important as gifts that family spends time together where family bonds gets richer and stronger. Along with gifts and presents we can create together some new activities or traditions based on fun and having quality time together.

We have set few traditions and activities since kids were small and still carry some of them, like we watch some Christmas tele together, we play few games ....others , we cook together or just chat and revive those old times..

After all Christmas is all about when you surrounded by the family, sharing memories and time together.

Just a couple of days ago while we were having dinner, daughter was watching 'Food unwrapped' programmer which she puts on record while she is away from home and whenever she comes home , she watches them. I like that program too, where three presenters uncovers the good, the bad and the ugly food secrets which are lurking in our kitchens, they presents food and science series that travels the world to lift the lid on what's really in the food we eat.

In the program  they were discussing the theory into why biscuits dissolve during dunking. We absolutely enjoyed and learnt science behind it. So, after the program finished we were discussing which biscuits we like best dunked ? Personally I never dunk my biscuits ... daughter and husband came up with the same answer ' Ginger Nuts ' and they both said they love to have them and in about an hour daughter baked them. Gingerbread Man Cookies in all shapes were sprawled on every surface in the kitchen.

Once they were baked, cooled we thought of icing them as we are all in festive mood, kids and dad took job on hand, with so much giggle, jokes and icing spilling everywhere we had Gingerbread man cookies ready..I know they all are in odd shape, untidy icing but most important that we made them together and had laugh too.  And oh boy they came out so well...and yep, dad and daughter duo enjoyed dunking them, where me and sonny boy devoured on it's own, especially Ginger cookies as all of us are right now suffering with sore throat...( maybe I'll rant about this in another post :p )

Delicious, wonderful and Chewy Gingerbread Cookies can be a lovely Christmassy edible gift !!

You will need :- 

  • 175 g butter
  • 150 soft dark muscavado sugar
  • 75 ml golden syrup or honey
  • 1 tsp. bi co soda
  • 450 g plain flour
  • 2-3 tbsp. dry ginger powder
  • 25 g steam ginger finely chopped ( optional )

Method :-
Heat sugar, butter and golden syrup in a pan.
Mix flour, soda and both ginger.
Slowly add sugar syrup in the flour and mix with the wooden spoon.
Once lightly cooled tip it on the surface and knead briefly until smooth.
Wrap in the clingfilm for 10 minutes and chill in the fridge.
Pre heat oven to gas mark 4.
Line tow baking trays with greasproof paper.
Roll the dough out on a clean surface about 1/4" (inch) 
using cutters, cut out the cookies in desire shape.
Place on a lined baking tray leaving gap in between.
bake them 15-18 minutes or until golden. 
Remove from the oven.
Leave them on tray for another 10 minutes.
Let it cool completely.
Once cooled decorate with eggfree writing icing. 
Enjoy them with cuppa and your friends and family.
