Khada Masala Bhaat Rice

You will need :-
  • 1 cup basmati rice
  • 2 tbsp. whole spices like clove, cinnamon, green cardamom, black cardamom, whole black pepper and bay leaves ( I used fresh bay leaves from my garden )
  • 1 tsp. whole cumin seeds
  • 1 whole red chilli ( optional )
  • 2-3 tbsp. any oil
  • 2 tbsp. fresh coriander finely chopped
  • Salt to taste
  • Warm water as you need ( I only needed 11/4 cup water 

Method :-
Wash and soak rice in a cold water for half an hour.
Heat oil in a heavy base pan or kadai.
Add all the whole spices except cumin seeds.
Fry for 20-25 seconds and add cumin seeds.
When cumin seeds crackle , ONLY add rice but no water.
Turn the heat low.
Fry rice for 1-2 minutes.
Now add warm water ( I added only 1 cup at this stage ) IN UK I do not need much water if I soak my rice for half an hour.
Add salt to taste.
Cover the pan with lid and turn the heat on HIGH.
After one boil, turn the heat low and let the rice cook .
Check after 5-6 minutes, if you think you'll need more water add little and cook again.
If it's done, turn off the heat and leave it for another 10 minutes with lid on. ( This process called DUM cooking )
Rice will absorbed all the water and rice will cook fluffy in it's own steam.
Garnish with chopped fresh coriander and enjoy with your choice if curry or daal.
