Taju Gajar Marcha Athanu | How to make Instant Carrot and Green Chilli Pickle

Surely, you hardly need telling that firstly you can't beat homemade pickle. The benefits of homemade over shop bought are common sense. You control exactly how much oil and salt that goes into the recipe. It is also less expensive to buy ingredients from scratch, and even though you argue time is money and cooking takes time, this recipe will at most take you 5 minutes to prepare. Trust me, that's a small price to pay!

I think that keeping a bottle of this pickle near the dinner table is great. The colour firstly adds to the appeal, making eating it more enjoyable. It enhances the flavours of the curries that I eat it with! Because there is no cooking and heat involved, the carrots retain their health benefits as no vitamins are destroyed!

Of course, homemade pickles may not necessarily last as long as shop bought, but I can assure you it won't be around for long!

You will need :-
  • 3-4 medium carrots, washed, peeled and  Julienne
  • 7-8 fresh green chilies round cut pieces
  • 3-4 tbsp  achar Masala
  • 1 tbsp oil

Method :-
Mix everything in a one bowl and leave it for 10-15 minutes.
Instant pickle ready to eat.
Enjoy with your main meal.
