Stuffed Capsicum with Peanuts

I love vrat ka khana, but since I have gained more knowledge about nutrition and healthy eating I avoid fasting.

But in this fasting recipe I have used peanuts to get protein and capsicum for some vitamins, minerals and other benefits. The colours of the capsicum look great and the different flavours and textures are wonderful!

You will need:
  • 2-3 capsicums
  • 1 medium potato peeled and diced
  • 1/4 cup coarse ground peanuts
  • 1 tbsp grated coconut
  • 2 tbsp ginger-chili crushed
  • Salt per taste
  • 1 tsp sugar
  • 1 tsp lemon juice
  • 1 tsp black pepper powder
  • 1 tbsp Oil
  • 1 tbsp fresh chopped coriander

Wash capsicums and cut into half.

In one bowl mix peanuts, coconut, salt, sugar, lemon juice, ginger-chili paste, and black pepper powder.

Mix everything and stuff mixture into half cut capsicum

Heat oil in a heavy-based pan and place stuffed capsicum into the pan.

Add diced potato in the leftover stuffing, mix and add into the pan.

Add little water, cover the pan with a lid, and let the sabji cook on very low heat.

It will take 20-25 minutes to cook the potatoes, if potatoes are not cooked add few tbsp of water and let it cook again.

When sabji is done, turn off the heat.

Garnish with chopped coriander and serve with mild yogurt and round and soft Gujarati rotlis.
