Khichu








You will need:-
  • 1 cup rice flour
  • 2 cup water
  • 1 tsp slightly crushed cumin seeds
  • 2-3 fresh green chillies finely crushed
  • salt to taste
  • 1 tbsp sesame seeds
  • pinch soda bi carbonate
To serve with :-
  • Peanut oil
  • red chiili flakes
  • fresh chopped coriander 

    Method:-
  1. Heat 2 cup water in a heavy bottom pan.
  2. Add cumin seeds, chillies, sesame seeds, salt and soda.
  3. When water starts boiling, add rice flour to it.
  4. Don't touch the flour, just let it cook on a low heat.
  5. After few minutes when water absorbed by flour, with wooden spoon stir the mixture.
  6. Turn off the heat. Let it cool for 5 minutes.
  7. Take a small amount of flour mixture, make a small ball and slightly flatten the ball.
  8. Make a small whole with your thumb, repeat till you finish
  9. Steam the flatten rice ball for 15 minutes.
  10. Garnish with fresh chopped coriander.
  11. Serve with peanut oil, chilli flakes and green chutney.
Note :- You can skip the steam method and continue , let the mixture cook  on a very low heat about 15-20 minutes. Then straight away serve.
