Hello readers,
I've become somewhat a baking Queen in the house lately (I say Queen because my kids seem to fancy themselves as princes and princesses and my hubby a king! )... baking all sorts of delights for the family. These days, my house is filled with the rich scent of melting butter and sweet aromas , brilliant for those days when your stuck at home while outside it's raining cats and dogs !!
Everyone was feeling a little under the weather in the house so I made hot cookies as a pick me up! Definetly easy to prepare in very little time. The cookies came out lovely - soft on the inside and crunchy on the outside. Aroma of cardamom and crunchiness of the nuts gives that extra zing to these cookies. They went down a treat with a steaming mug of coffee!
You will need:-
- 2 cup whole wheat flour
- 1/4 cup rolled oats
- 1/2 cup ground cashew nuts ( you can use almonds )
- 2-3 tbsp chopped pistachio nuts and almond slivers
- 1/2 tsp cardamom powder
- 1 cup sugar
- 1 cup butter at room temperature
- 2-3 tbsp milk at room temperature
Method:-
Pre heat oven to 5 Gas mark.
Place all the dry ingredients in one big bowl. Mix well.
Now add butter and little milk at a time to make a soft dough.
Divide the dough into equal parts and make balls, press them lightly with your hand.
Place the pressed cookie balls on the baking sheet and sprinkle pistachio nuts and almond slivers.
Bake cookies about 15-18 minutes or till light golden brown.
Remove the cookie sheet from the oven and let it cool at least five minutes.
Now remove cookies from the sheet.
You can enjoy these little healthier cookies while they are semi hot or let it cool completely and store them in airtight container for later. ( if any left ;-D )
