Eggless Vanilla Ice Cream

I decided to start off easy and test out the maker by making french vanilla ice cream. It's a simple recipe that tested the quality of the ice cream that could be produced. I have to say that I was not disappointed with the results. The ice cream came out silky, luxurious and very very tasty. The texture was spot on and the recipe ensured that the ice cream was not overly sweet but simply perfect! I know that I won't be making hurried trips to the supermarket anymore as the sun comes out that's for sure!

You will need:-
  • 125 ml full fat milk chilled
  • 125 ml single cream chilled
  • 250 ml double cream chilled
  • 80 g sugar
  • 1 vanilla pod - halved lengthwise
  • Ice Cream Maker

Freeze the freezer bowl as per manufacturer instruction.
Combine milk, single cream and sugar in one bowl till sugar completely dissolved.
Scrape vanilla seeds from the pod with the tip of a small knife into the milk mixture.
Now combine double cream and milk mixture, place freezer bowl into ice cream machine, turn it on and transfer liquid into the ice cream maker and follow according to manufacturer's instructions.
My ice cream maker produces soft finish, so for a firmer texture, I freeze the ice cream mixture into airtight container for at least an hour.
Ice cream is ready to serve.

  1. Do you really need 3 kinds of milk to make vanilla ice cream? I thought just using double cream is sufficient...? :-/

    I think it's time for me to start making some ice creams too, seeing how the heat in Texas is increasing each day!

    1. Nisha..I have adapted this recipe from my maker's recipe book..I suppose you can use only double cream..maybe next time :-)

I bought an icecream maker too, still haven't used it, in my part of the world its still rainmng, may be i should move to london, i bought thinking i don't need to do any hard work any more & the sun will be here for at least 6 months:(, which doesn't seem to happen, anyway ice cream looks gorgeous
