Glazed Lemon Cornstarch cookies

It's a right Royal affair ! The Queen's jubilee has approached to celebrate her reign of 60 years and we all are so excited to witness the whole celebration. Yesterday in my Son's school they had a jubilee party, so I thought I'll make something for him to take to the party. As summer is right here in UK..gorgeous weather and juicy yellow lemons go hand in why not enjoy that refreshing summer flavour with lemon ? So to celebrate the jubilee I made Glazed lemon Cookies..These cookies are light, refreshing and perfect for summer. These cookies are soft , buttery with a hint of lemon. On these cheerful cookies, the lemon glaze adds a sweet and tart finish. These cookies make a great dessert for summer parties, picnics and BBQs ...They were adored by his school teachers and kids..also at home they vanished in no time :-)

Note:- I decorated cookies because of the Jubilee don't have to..can stick to glaze only.
Recipe adapted from here and baked with minor change.

You will need:- Cookies
  • 1 cup butter at room temperature ( not softened or melted )
  • 1/3 cup caster sugar
  • 1/2 tsp grated lemon zest
  • 1 cup plain flour
  • 3/4 cup cornstarch
  • 1/4 tsp vanilla extract

You will need :- Glaze
  • 1 cup icing sugar
  • 4-5 tsp fresh lemon juice
  • 1 tsp water
Pre heat the oven to gas mark 4-5 ( 350 F ).
In a large bowl, beat butter until creamy looking.
Add caster sugar, mix until light and fluffy.
Add lemon zest and vanilla extract, beat well.
Add flour and cornstarch into butter mixture and mix well until well combined.
Place dough by tbsp on the ungreased cookie sheet spacing 2 inches apart.
Bake 15 minutes or till bottoms are light brown.
Remove from the oven, let it cool 2-3 minutes on the  baking sheet and transfer to cooling rack.
Let cookies completely cool .
In a medium bowl, whisk together powdered sugar and lemon juice. Dip each cookie top into the lemon glaze.
Let cookies sit until icing has set.
