Hash Brown and Pineapple Chaat is an enticing fusion recipe. Crispy hash browns form the base of this Indian street food classic and the addition of pineapple gives a surprising sweetness that works really well with the medley of chutneys.
Hash Brown and Pineapple Chaat
I first tried this recipe out years ago because I had some leftover cooked hashbrowns from a Full English brekkie and had the chutneys leftover in the fridge too.
I took a gamble and layered the chaat and it turned out great! The hash browns were like aloo tikkis and soaked up the chaat flavours brilliantly.
This recipe is easy to put together if you have the ingredients to hand. This chaat is vegetarian but can easily be made vegan by using dairy-free yogurt or omitting the yogurt totally.

Ingredients for Hash Brown & Pineapple Chaat
- Hash browns – hash browns are essentially potatoes that have been grated or diced and are then pan-fried. Ready-made hash browns are readily available in the frozen section of most supermarkets. The hash browns here replace the papdi or puri that is sometimes added to chaat.
- Pineapple – you can use fresh pineapple cut into chunks or tinned pineapple chunks in fruit juice.
- Imli and Date Chutney – for tangy flavours
- Red Garlic Chutney – this chutney is optional as some people may not want an overly spicy chutney that contains garlic
- Green mint and coriander chutney – this chutney adds zing
- Sev – added on top for wonderful textures. You can use nylon sev which is easily available from Indian supermarkets and snack shops
- Sweetened Yogurt – we used plain full-fat yogurt but you can use low-fat (may add a slight sourness) or non-dairy yogurt if vegan.
- Red onion – diced red onion is best but can be omitted if not wanted
- Coriander – finely chopped coriander adds a freshness
- Chaat Masala
- Pomegranate arils

HASH BROWN AND PINEAPPLE CHAAT
Hash brown and pineapple chaat, unique and flavourful.
prep time: 15 Mcook time: total time: 15 M
ingredients:
- 4 pieces of frozen potato hash brown (can use Aloo tikki )
- 1/2 cup pineapple pieces
- 2 cup thick yogurt beaten
- 4-5 tbsp sev – gram flour noddles
- 1/2 cup Tamarind chutney
- 1/4 cup green chutney
- 1/8 cup red garlic chutney
- 1/4 cup Red Onion chopped
- Salt to taste
- 1/2 tsp chaat masala
- 1 tbsp sugar
- 2 tbsp fresh coriander finely chopped
- 1 finely chopped green chillies
- 4 tbsp pomegranate arils
instructions:
How to cook HASH BROWN AND PINEAPPLE CHAAT
- Place beaten yogurt in a large bowl and add sugar.
- Mix well and leave it aside.
- Cook frozen hash brown under the grill or in the oven according to instruction till golden brown and crispy.
- Place one or two cooked potato hash brown on a serving plate.
- Top it up with pineapple pieces and yogurt over the potatoes.
- Sprinkle chaat masala and pour the chutneys according to your liking.
- Garnish with sev, finely chopped coriander, red onions and pomegranate arils.
- Sprinkle some more chaat masala and red chilli powder if you wish.
- Enjoy.
