You all know how much of a huge fan I am of Spinach, I don't leave any opportunity to cook with any type of spinach, spinach is like my family member.  I have to buy it whenever I go for my groccery shopping, if it's possible fresh and I always keep one packet frozen too...and spinach is perishable, you have to use very, many times my innovative ideas come useful....Past few years I been making this daal....

Spinach and bengal gram daal -mix them together and you get fragrant daal (Soup) which contains Protein, Iron, Vitamins A and calcium....also LOW GI food for you !

You will need:-
  • 1/2 cup Bengal Gram Daal(chana Daal)-Boiled
  • 1 small bag of spinach(you can use palak)
  • 2 tsp paste of green chillies, Ginger and Garlic
  • 1/2 tsp kasoori methi (dry fenugreek leaves)
  • 1 small Onion finely chopped
  • 1/2 tsp Cumin seeds
  • Pinch Asafoetida
  • 1/2 tsp Garam masala
  • 1/4 tsp red chilli powder
  • 1 tbsp olive oil
  • 1 tsp cumin and coriander seeds powder
  • Salt to taste
In a microwave cook spinach with very little water about 2-3 minutes.  Grind in a grinder coarsely, not like a paste...In a heavy bottom pan heat the oil, add cumin seeds, asafoetida and kasoori methi.  When it splutters add onion, fry for few minutes, now add GC ans GG paste and cook for few seconds..Then add all the masala powder and cook, add spinach mix very well, add little water (I used my paneer whey) and cook for 4-5 minutes.  Now add boiled daal and cook on a low heat 4-5 minutes.  Ready to serve..

Perfect with Basmati Rice and Roti or Naan...Enjoy as much as we did !!

♥ One more Joyful moment ♥ - Asparagus and Peas Risotto !

I'm very happy to announce that last month one of the my recipe 'Potato Gnocchi' entered  voting on Tobias cooks blog, and I've won ! Tobias has sent me a prize "The Essentials of Classic Italian Cooking" bestselling book by Marcella Hazan.....Sincerely I would like to thank each and everyone who voted for me, It means a lot to me...without your support I maybe not lucky enough to own this prize ! also I would like to extend my gratitude to Tobias ....It was a great experience and I was honoured to take part in this awesome event....

And I already started to cook dishes from the book too...first thing first I made this Risotto, as already I had a few stuff with me..A creamy vegetable risotto with all the fresh flavours of spring and early summer...

You will need:-

  • 250g bunch Asparagus
  • 2 vegetable stock cubes
  • 1 medium onion, chopped
  • 1 garlic clove, finely chopped
  • 2 tbsp olive oil
  • 350 g Arborio Rice
  • 200 g frozen peas
  • 2tbsp chopped flat-leaf parsley
  • 15g butter
  • 125g cheese(used asda Lancashire)
Bend the asparagus stems until they snap and discard the tough ends.  Cut the tender part into 3cm pieces.  Dissolve the stock cubes in 1.4 litres hot water and put in a pan on a low heat to keep hot.  Cook the onion in the oil in another pan until translucent.  Add the garlic and cook for 1 minute.  Add the rice and stir over a low heat for 2 minutes.  Add a ladleful of hot stock and cook, stirring slowly, until most of it has been absorbed by the rice.  Continue to cook gently for 15 minutes, adding the stock a ladleful at a time and waiting for each addition to be almost absorbed before adding the next.  Stir all the time.  Add the peas and asparagus and stir gently.  Continue to cook, adding the stock a ladleful at a time until the rice and asparagus are tender.  Stir in the parsley, butter and half of the crumbled Lancashire cheese.  Serve with the rest of the cheese on top.  Enjoy as much as we did...

Broccoli Rice !

Although I'm a huge fan of must've noticed that on my blog, I don't have many rice recipes...maybe because I eat quite a lot of rice, so I don't think much about it and always forget to take pics of my rice dishes...but this time my hubby and kids reminded to me to take pics of this particular rice dish which is very popular within the family..If I make this broccoli rice we don't need any other dish, just one big meal with yogurt or Raita and we all are happy...:-))

You will need:-
  • 1 cup rice
  • Few spices like cloves, cinnamon, cardamoms and bay leaves
  • 1 cup broccoli florets(steamed)
  • 1/4 cup cashewnuts and raisins
  • Salt to taste
  • 1/2 cup diced onion
  • 2 cloves of garlic
  • 1/4 cup fresh coriander
  • 2-3 green chillies
  • 1/2 " ginger piece
  • 1/4 cup fresh or dry coconut powder
  • 2-3 tbsp oil
  • 1/4 tsp cumin seeds

Cook rice with all the spices and salt,(each grain must be seprated) and let it cool.  Grind the ingrediants(onion, garlic. chilli,ginger, coriander and coconut powder) with little water.  In a heavy bottom pan heat the oil and add cumin seeds, after splutter, add cashews, raisins and broccoli and let it cook for few minutes. Now add green grinded paste and mix very gently and let it cook for 2 minutes.  add cooled rice and mix really well.  Ready to serve..really goes well with any type of raita, but we love to have it with Masala boondi raita..Enjoy as much as we did...

Joyful Eating Whilst Travelling Round Up # 2

Hey friends here I am with Round Up # 2...if you haven't checked out Round Up # 1 please do check it out..

Shabitha played  and enjoyed Dandiya Raas in Gujarat, at Navratri Festival... who wouldn't? for her that was a different experience and she says she will relish it every now and then...In Gujarat she tried Aloo Poha, first time as she never had poha with potatoes...

Shabitha experienced star hospitality in a houseboat during her trip to Alleppey...where she had Alleppey chicken gravy cooked in mineral water...It was a big hit for her and even today she feels that it was a best food ever she ate!! 

Siddhi is glad that her friends forced her to taste Kesari Angoori Rabri in Amritsar, she tasted first time there during her college tour and she thanks  her friends now and says otherwise she would have missed the best dessert ever she had..don't you think so guys that we should also thank her friends too!!

Kanchan believes that if you haven't travelled Mumbai-Pune by train, than you missed something heavenly..her picture is a proof of that journey..agree with her..also she thanks Indian Railway Catering Service where she had a regional dish Sabudana Vada

Sonal went crazy after seeing miraculous colourful tulip bulbs and Poffertjes which are tiny dutch pancakes, during her visit Melbourne, Australia...whenever she remembers those yummy and delectable pancakes her mouth waters..:DD

Prani and her husband tasted these particular Crab cakes from fisherman-wharf in San Fransisco.. both loved it and had 2 sets of crab cakes, On her husbands request she prepared them at home and they both enjoyed it at home too...

Nithubala and her family tried this delicious Fried Masala Idly in one of the famous restaurants in wonder she wanted to make it at home, coz after seeing this inviting  pics I tried  it too at home..

Nithubala tasted this wonderful combo Pesarattu - Upma & Ginger Chutney during her college tour in Delhi..Few months back she was lucky enough to find a recipe so she prepared this mouthwatering dish at home..I think we are all lucky Nithu !!

Jyoti says whoever doesn't like chocolate she can have their share..lolz..Jyoti you lucky girl coz you can have mine, but not this time !! I am gonna gobble up all her Chocolate Rum Truffles, she made them at home without much effort after she came back from San Fransisco where she tasted it first time...

Jyoti had to have this Masala Bhindi with her PIL, on their short vacation to beautiful place Kodaikanal and Munnar... although she never liked Bhindi (Okra), somehow she managed to finished it all and guess what she liked it and she made it at home too !!

Suma is serving us this Unique Nannari lassi, this non artificial drink really works for you in the summer that is what she says and she tried it out in her husbands hometown Raylaseema in India..whenever she prepares this lassi she cherishes those valuable moments...

Cool lassi(e) had this French Crepes With Yogurt and Strawberry Filling in Paris after whole day in Louvre museum on her feet..She says they were the best tasted crepes ever..she makes it at home and with it's tasty flavour brings joyful memories...

Cool lassi(e) serving us Quintessential Beantown(Boston) Baked Beans from Boston..She says you can cook this dish maybe hundred ways, but after lots of experimenting in the kitchen she came up with a version that she liked best. I'm sure we'll all like it too..

Cool lassi(e) loves to travel abroad, loves to explore the new land, culture and of course local cuisine..she had this Ligurian Shrimp Stew in Italy and she fell in love with it..thanks to TV chef Giada, who reminded Cool lassi(e) her beloved dish and she recreated it once again..

Cool lassi(e) taking us on tour of SouthIndia with this yummy South Indian Mini Meals..

Cool lassi(e) got inspired to make this( maybe not every one's taste)  Bitter Gourd, Pinto Beans and Raisin Patty Sliders being a fan of a burger joint in NYC called POP Burger that caters dot-sized burgers.FYI,

Cool lassi(e) serving us this healthy, easy to cook and tasty snack ChickPea Sundal With Carrot&Raw Mango :Packed With Protein.  Her recipe is inspired by Marina Beach Sundal...

Cooking foodie had her first ever cocktail in Florida and it was Pina Colada.  Whenever she has this beautiful cocktail it's reminds her of those sandy and blue water beaches !!

Cooking foodie says this hearty chunky Minstrone Soup ,saved them in sub zero temperature in Colorado..and now she makes at home and her picture says it all...I wouldn't mind that soup even in summer...

Cooking foodie didn't believe her cousin until she saw with her own eyes and had this awesome mouthwatering Paneer Butter Masala Pizza in soon as they had it they were hooked and now she prepares them at home and they are her husband's favourite ...

Cooking foodie had this Irish Coffee with her friends on her trip to Colorado after skiing and skateboarding..and this coffee warms you enough to brave those snow again...

I've tried skiing, tell you worst thing I've ever done in my life..(that's me Jagruti)

Alphanso mangoes with herbs !! ~ Mango Mania

When my daughter made this salad , for her school project,she used normal mango. We liked it but being an Indian, I always love to have Indian touches in other meal and I wanted to use Alphonso Mangoes in there..I waited more than 5 months for the Alphonso mangoes.  Now they are in my home, and the Aroma of this mangoes all over the house!!  Kids are enjoying them, me too.....and today first thing first I made this salad..Recipe needed ripe but firm mango...If I describe this salad I would say yes it is unusual combination, sweet fruit with crunchy vegetables in a chilli-spiced dressing...but I can say this is the most attractive and appetising salad I ever had in years!!!! Serve it as part of an Al fresco meal in the summer...well I can't, it's raining here..:-((

You will need:-

  • 1 red onion, thinly sliced and separated into half-rings
  • 1 ripe but firm Alphonso mango(use any)
  • 1 kiwi fruit, peeled and thinly sliced
  • 1/4 cucumber, thinly sliced
Chilli and herb dressing:-

  • 1 fresh red chilli, seeded and finely chopped
  • 1 tbsp sunflower oil
  • 1 tbsp lime juice
  • 1 tsp clear honey
  • 2 tbsp chopped fresh coriander and mint
  • Salt and pepper to taste


Combine all the dressing ingredients in a screw-top jar.  Shake well to blend.  Put the onion in a shallow dish, pour over the dressing and leave to marinate for 30 minutes.  Halve the mango lenghtways, cutting down round each side of the stone.  Peel of the skin, then cut the flesh into small slices and place in a bowl. Add the kiwi and cucumber.  Tip the marinated onion into the bowl together with all the dressing and fold together gently.Ready to serve..Enjoy...actually right now I'm relishing this salad, couldn't wait to try it out and let me know...

Joyful Eating Whilst Travelling Round Up # 1

Joyful, Joyous and Jubilant,  these are the words I can say for myself right now for describing my self...sitting here and looking at my inbox, making roundups for my first event which I had announced nearly 8 weeks ago,when my baby (my blog) was only two months old and I setup a challenge for myself.  I was very apprehensive, but I had faith that my fellow joyful bloggers would respond well to my first event and make it successful.  By surprise Asha of ASHAON KA also helped me to spread the word about my event on her blog..Hey Ash Thanks a lot sweetheart!! and also I would like to extend my gratitude to my bloggywood buddies who sent in their entries for this event...It's my pleasure to pass on to all of you participants with this small token in form of a 'Participant Award'..please accept it... So here I am with the round up # 1 with  40 entries....and adding 3 of 43.. I thought they were all let's find out where our fellow bloggers have been and what dish they were eager to recreate at home !

Nayna has sent us Cous cous Salad, very versatile dish...she and her family tried whilst they were holiday in Greece and since then became a firm family favourite......

Mexican beans and fruit !!

I was supposed to post this recipe more than one month ago, but one reason and another it was just sitting there in my I made it again and my daughter asked me if have posted it or not? (this one is her fav).  and I promised her that today I'll definitley post it..So here I am with this recipe. Earthy rustic beans, are good paired with fruit, as in this classic from the Mexican Kitchen, where it is called frijoles con frutas.  If fruit with beans sounds alarming just remember that the tomato-an essential ingredient of our familiar baked beans-is also a fruit.  This is a high - fibre dish, rich with vitamins...

You will need:-
  • 1/2 tin pineapple cubes
  • 1 green skind apple(used granny Smith)
  • 1 tsp lemon juice
  • 1 tsp oil
  • 1 small onion finly chopped
  • 1 clove garlic chopped
  • 1 ripe tomato chopped
  • 1/4 tsp red chilli powder
  • 1 tsp Tabasco sauce
  • 1 tin borlotti beans drained
  • Salt to taste
  • fresh coriander

Heat the oil in a pan and cook onions with garlic until they are lightly browned and softened.  Meanwhile dice the apple and sprinkle with lemon juice.  Now add diced apple and continue to cook, stirring frequently, untill dice are slightly brown, add pineapple and cook for few minutes.  Now add tomatoes and chilli powder and Tabasco sauce and continue to cook for more 3-4 minutes.  Add the beans to the fruit mixture and stir well and cook urther 5 minutes over a low heat to mix and mingle the flavours.  Season to taste with salt.  Garnish with the fresh coriander.  For a mexican style presentation, accompanany with flour tortillas...Enjoy as much as my daughter did.....

Baingan Bhartha (Roasted Aubergine) with spinach !! and Event Announcement(Updated)

Ok guys, tell me  the truth how many of you hated or dislike aubergine or eggplant, or even now you are avoiding..;-))....well I was one of you, during my childhood I really hated all the vegetables, just happy with potatoes..but could't say it to mum..I was a good girl, wasn't I ? However, as I got older, when it was my turn to go out and buy the food, the first thing that I bought was, surprisingly, aubergines ! SInce then, I've started liking them so much that my mum would end up getting angry with me becasue that would be the only vegetable that I kept buying. Now, I have to start again with my daughter, only I hope that one day she will go to the shop and bring home some aubergines for me !

My mum has taught me many dishes with aubergine and even I have seen many in recipe books and on the internet, but undoubtedly, my favourite aubergine dish has to be Baigan Bhartha. At the moment, aubergine can be bought cheap so there isnt a week that goes without making a dish using aubergine - much to the displeasure of my daughter.  So there are so many great aubergine memories with my mum and my daughter...So what is Baigan Bhartha? Is lovely or should I say heavenly smoky flavoured roasted eggplant!!  Every region in India has their own version of Baigan Bhartha...Now days even in parties I have seen this dish..and in U.K English people have started liking it too..

You will need:-

  • 1 large Aubergine
  • 1 packet of fresh baby spinach
  • 1 teaspoon cumin seeds
  • 1/2 cup onion finly chopped
  • 1 1/2 teaspoons ginger, grated
  • 1 teaspoon garlic, grated -can use green garlic
  • 1 teaspoon green chillies, finely chopped
  • 1/2 cup tomatoes, finely chopped
  • 1 tsp red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon coriander-cumin seed powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon Olive oil 
  • salt to taste

For the garnish

  •  Handful of fresh chopped coriander

Grease the brinjal with a little oil, make slits all over the surface and cook over an open flame till it is soft.

 Cool and peel the skin. Mash the pulp thoroughly and keep aside. (I grind it in grinder, so there isn't any lump in the puree) Heat the oil and add the cumin seeds. When they crackle add the onions and sauté for a few minutes.  Add the ginger, garlic and green chillies and fry again for a few seconds.  Add the tomato, turmeric powder, coriander-cumin seed powder and cook till the oil separates from the masala. Add the mashed brinjal, garam masala and salt and mix well.   Now add washed spinach and let it cook further 2-3 minutes. Serve hot garnished with the coriander. and enjoyy as much as I do..;0)) I love to have it mine with Bajra Rotla(Millet flour roti)..

Few weeks back Sadhana and Muskaan of A2Zvegetarian cuisine asked me if I can be a guest host of their Home Remedies Event...It's huge successful event and this event is hosted as a series..I am honored and lucky to host the event and I'll be hosting event for May 2010.

A natural home remedy is one way to help you heal. It is a form of self-help.  Taking control of your own health.Natural remedies are a great thing to have on hand when allergies kick in, skin problems crop up, and your hair fries after a long, hot summer and headaches, to sleeplessness, to the many stress related illnesses.or should I say a very long list that can go on and on..... So let's get together and fight all these unwanted and nasty problems like Hayfever, Watery eyes, dry skin, sunburn, if you been stung by a bee, digestive problems, toothache and if you think any others, post them to me..

There are some rules to follow

1) This is a vegetarian blog so ingredients used should be strictly vegetarian, no eggs allowed please, however dairy is exempted.

2) Please send only remedies which you have tried & tested in your home and worked for you.
